Kenji has two recipes out there:

The recipes are slightly different, the newer requiring more water, but the main difference seems to be the no knead rise time.

The older recipe says to rise max 15 hours, while the newer recipe says 24.

I used the older recipe tonight and started it with plans to have it rise 24 hours of the newer recipe.

Do you think this will result in an overproof or perhaps the older recipe is out of date?

    It’ll be fine! (Also that recipe is not from 2020. More like 2009 or 2010, while the Sicilian is from 2013 or so. You need to check the “first published in” date which they hide for some reason).
