Easy Holiday Herb, Lemon Roasted Chicken with Vegetables

Ingredients:
– 1 whole chicken cut up
– 1 small red, green & yellow peppers
– 1 small red onion
– 2 to 3 large carrots
– 3 to 4 red potatoes
– 1 lemon
– 1 tsp each: granulated garlic, turmeric, black pepper, salt, red pepper
– 2 to 3 tbls olive oil
– 1 to 2 tbls fresh oregano, mint, thyme & rosemary

My name is Elena John welcome to m m in Italian means my kitchen and we’re into the holiday season super busy and I’m going to show you how to make a very easy peasy simple dish that goes into one nice bacon dish the oven is going to do

All the work so it’s all of us just getting ready to prep so what I going to all of the ingredients is going to be listed when you click uh um that scroll down and that’s where you will see the ingredients so the first thing I’m going

To do is I have a huge potato look how big this organic potato is and it is a red potato so you know it’s it’s huge so what I’m going to do because it’s so big I am utilize one of these potatoes now depending on the size of your family

Guys you can use as you know a maybe four or five potatoes and what I want to do is I want to cut them all in the same size like nice and chunk and then what I want to do is I want to just put them

All in here so it’s going to be cut and dropped pretty much so so let me move everything out of the way here and I’m really excited to bring this dish to you because as I stated you know with everything being so busy and uh with so

Much going on you know sometimes we don’t know what to do for dinner and this is very nice and it’s just all in one dish and it’s delicious and flavorful and it only takes an hour and a half a 375 375 for an hour and a half

Covered then we’re going to uncover it and leave it for 15 more minutes so the chicken on the top get nice and crispy okay so what I’m using again you know red potato goes in here look at the size of this carrot it is huge and

Because it’s so big I’m going to cut this guy in half if uh again you know you guys can use two three chickens I mean carrots I’m thinking of the chicken the chicken is coming and again you know I’m just going to keep it into nice bite

Sizes bite sizes so okay all goes in there like that and I also have another carrot because I really love carrots and carrots are very uh good for us and they’re healthy and I’m going to leave this guy whole and I’m just going to cut

It just like so make it very simple and easy guys it’s all about being simple then I’m going to take a red onion and I’m going to take the peel off because uh we need to take the peel up and uh the red onion is also going to

Bring her deliciousness to to this dish and then you know we’re going to have add all these wonderful herbs and um and that’s coming too again you know we tend to forget to take care of ourselves are in the holiday season and that’s the reason a lot of people get sick

So we’re going to cut the onion like so we’re going to cut it again see what I’m doing cut it in half or cutting it again and then I’m just going to take the onion and just kind of go like this and I’m just going to put it in here as like

That that way I’m not dealing with cutting the onion you know it’s very simple transaction guys very simple transaction because what I want to do is to bring you healthy eating healthy vegetables and these are so so tasty and like I said everything goes into a 375

Oven for an hour and a half covered and then uncover for another 15 minutes as simple as that that is all taken care of okay now what I have here is uh I have mint I have Rosemary Rosemary you come over here and you just go like that and

I love Rosemary because this is going to give a lot of flavor to this dish so I am just going to take the the little pieces of the um Rosemary very easy transaction again everything is easy easy peasy to make your life easy I am going to take my

Oregano the same way I these are all my herbs that I grow myself again oregano how about oregano if you like a lot of oregano eat add more oregano cuz there’s a lot of great health benefits to oregano and I’m not going to get into it

So you know you can use two to three tablespoons you know we have uh a little bit going on here so it all of this is going to go for everything and I’m going to take my mint the mint is just it’s just gives it such a nice flavor to this

Whole thing and then of course you know uh I am going to and then what I do with my with my um and I know it’s very little the time so I just kind of you know just kind of move your hands like that make it very easy go see what I’m

Doing guys make it very simple and easy and then it it all comes into this board and now I all I got to do is take my stems away from it and uh and what I have left in here is make sure you remove the stems CU you don’t want to be

Eating stems when we cut all this up CU this is going to be our wonderful herbs that is going to make this entire dish so flavorful and so delicious if you don’t have fresh I highly recommend to get at least one or two of them fresh

And then the rest you can use dry so just simple like that and then we’re just going to chop it very very F thin thin thin I can’t talk today hello everybody I see every single one of you thank you so much for joining today I’m

The side because I want to keep all of those beautiful herbs then I have a a a I like to add Peppers because it gives it a wonderful flavor and peppers are high on antioxidants and then we really need that so I have a yellow pepper

A green pepper and a red pepper again very easy transaction guys let me show you what this how this is going to play out go this way go this way open it up get your little bowl over here and then see what you get with this and then over

Here come in and you can just take this off like so and then you can just put put those in there just like that or if you choose you know you can cut them again and we can do that too so you know what

I am going to do that as well with you guys because we’re all doing this together very simple easy easy easy peasy and that’s what it’s about okay let me show this again you know we got it’s got four little Parts over here we

Go all the way down we do it all over again like so we we bring this back out we go like this we take this out right here you know sometimes you have this little piece right there remove that do the same thing with this guy it just

Makes it so much easier and easy to clean up so you don’t go looking for the little seeds that get all over the place and since I already have this guy over here let me move that all the way let me get my green pepper all of these guys

They all pair so well together oh I didn’t do a fork but if you do it like this cuz I’m having way too much fun you know I love the holidays I personally celebrate Christmas and it’s a very special time and I know that some of you

You know have lost loved ones but always know that your Lov ones are also right there with you and they’re probably having a wonderful time wherever they are okay and then you again you know just very simple very simple transaction put it all in there like that see that

Is this is just a cut and drop super easy and it’s a very colorful dish and it’s very tasty and wonderful and delicious all right so that’s it okay now I am going to take my seasonings and I’m just going to mix them together we got

Our herbs and we have our seasonings our seasoning okay I am going to have a pound of chicken cut up and that’s what I have in this bowl right here that I am going to bring out and then what I’m going to do with that is I’m just going

To take a nice little bunch and I am just going to just add it to the chicken again all of the ingredients s are underneath this video when you subscribe to my YouTube channel simple as that you see that very simple now what I’m going

To do here so I’m going to bring this over here and I am going to dle this with olive oil a good amount of olive oil maybe one maybe two tablespoons you know what this is going to slow for me so I’m just going to do it like that there we

Go just like that put this little thing back there clean my hands over here and then you know with your spatula or a spoon whatever you choose just kind of mix it all together let me bring this over here just like that make sure that everybody is

Coated and you know what I’m going to show you I’m going to show you a trick that makes it so much easier you know get yourself some some you know uh uh spoons and then this is a lot makes it a lot easier to then that way you get everybody coated because

What we want to do now is we don’t want anything to get stuck on the bottom so you don’t have to work so hard to clean I’m just going to add a just a little bit of more olive oil I love olive oil and then now I’m going to come back with

The seasoning and I am just going to just pour it almost all of it now I’m going to reserve some of the other seasoning so I can turn the chickens around and get everybody’s seasoned then I’m going to take a good amount of the

Herbs and I am going to just add it like so you see you see that guys and now I’m going to mix all of these guys together because after all this is a wonderful herbed deliciousness that we are going to have on here now I also have a lemon and what

I like to do is I just like to just add some lemon zest because it gives it a nice extra flavor to this dish it’s just one one lemon and that’s what I’m using here all the way around make sure that you get them all in there like

So and this is going to give such a I’m telling you it all just goes together it’s just such a delicious meal and it’s easy guys it’s easy it’s just you know getting your prep done and then actually you can prep this ahead of time leave it

In the refrigerator and the next day just put it in the alen it’s very very simple and easy like that so I have an entire lemon zest in here make sure you tap it so you can get all the goodness and then again get come in here with

These guys mix these guys again oh it smells wonderful already and we haven’t done we haven’t cooked anything yet if you see that it’s you know that it needs a little bit more more little bit of olive oil add a little extra just a little extra will do you I mean you know

I just love olive oil all right so then now that we have this I’m going to remove this because I want to bring my attention to the chicken so the chicken remember that we had it all uh seasoned this is a pound that got legs you know

You know breast all of it I had my butcher I went to my butcher today and I had them cut me up a nice organic chicken so now I have these guys over here and I’m going to add the herb to that the herb to that just like that and

Then what I’m going to do is watch this I’m going to come back over here and I am going to put the chicken upside down upside down I can grab it and just lay it right on top of all the vegetables upside down guys upside down so that the

Herbs that way the herbs do not oops come on little chicken he doesn’t want to come up so the herbs don’t burn when they’re cooking okay and then we’re going to let me show you what I’m going to do after that so I’m just going to

Take my chicken Nestle them all in here they will fit trust me they will fit with the skin side down because as it Cooks it brings all the juiciness into all of these wonderful vegetables and we were so hard to do this now with the remaining of the seasoning this is when

I come back and really seasoned my chicken just like that okay now we get some saram I mean not saram wrap some foil but because before we finish with a a foil I want you to dle some olive oil on the top and that way that it’s going

To keep the chicken nice and moist my oven is a 375 I’m going to put it again at 375 for an hour and a half I’m going to take take it out I’m going to remove the the foil and I’m going to let it cook for another 15 minutes now when you

Remove it you have the choice to turn the chicken over and then that way you get that nice CRP skin or leave it the way it is I am going to you know turn it over so make sure that you get your foil and wrap it and then what you will have
