So I made fresh spaghetti noodles, 2.25cups 00flour, 5tbl semolina, 4 eggs+2 yolks, and while it was quality stuff, the spaghetti tastes differently than you’d expect. Kind of glassy, more like lo mein noodles than spaghetti. What recipes or techniques do others use for spaghetti noodles?
