TL:DR, Images are instant ramen. I want to make authentic Korean style ramen from scratch and eventually the noodles too. Any tips, tricks, material, recipes would be very much appreciated!

One of my best friends lives in Korea town on the other side of America from me and has turned my western home cooked ramen life upside down. After sending me some Korean instant ramen and adding some fresh ingredients it’s changed my taste buds. I’ve come to love it so much I won’t make ramen any other way.

However, instant isn’t a healthy choice all the time and I am getting older. I’ve been a cook for nearly a decade but it’s mostly been continental foods. So I did some research and asked my friend for some spices to start off with. He recommended Gochugaru and it’s excellent even just by itself.

I want to learn how to make authentic Korean ramen dishes from scratch. For now it I am using premade noodles until I can get the sauce taste down, but eventually I would really love to make my own noodles as well.

I am meeting my friend close to the end of this year. We have never met in person. I’d love to cook this from scratch for him.

The challenging part will be finding the ingredients as they aren’t very common where I live but I’ll make do with what I can find.

These images are some of the instant ramen versions I’ve thrown together with the ingredients I had at home at the time. In order of appearance they are Sriracha chicken, chapagetti, Spicy Jin, and “Neoghetti”

I’d like to turn this into an actual labor of love instead of a 15 minute dinner. Any suggestions?
