How does one make fries from these potatoes?

    I still cut them in wedges, they’re just short wedges.

    We don’t even bother with potato wedges, we just always dice them up and bake them. They’re better that way anyway IMHO…

    I like to parboil them first then cut them up into pieces, toss them in seasoning and bake on high

    I wondered the same thing when I had a recipe with fries— literally the tinest round potatoes— I pretty much ended up just doing little cubes like country style potatoes. Everything with hellofresh is seeming to get smaller and smaller these days.

    I had some little potatoes with a few meals, and just wedged them as the instructions directed. They were shorter, but just as good.

    I accidentally overcooked them by a lot they other day and they weren’t half bad. Should have dredged them in flour and seasoning first.

    I love the little wedges lol. Sometimes I’ll mash the potatoes instead, just for something different.

    Air fryer if you have one, pan fry if you must, but wedges in the oven will always work.
