I preheated for 1 hour at oven set at max, 550 F plus the temperature calibration of +35 F that I did. Now I need a 19″ steel!

This is the way.
Do you have a broiler on that oven? My oven only goes to 500f (+35f calibration) and I get my steel to about 650f with 10 minutes on broil after the preheat. I’m also on second from top shelf.

How long did it take to bake?
Do you have convection roast? Preheat with that and make sure you turn off the auto temp convert if your oven has that. That should get the steel to 630F or so.
