Hello everyone and welcome to the virtual product demo for Roth living here in Denver so I’m Chef Matt Chatfield from the Kansas City showroom and I want to welcome everyone to our demonstration today um you are able to submit some questions via the chat feature as we go along and
I’ll be happy to answer some shorter questions if there’s something that’s very detailed in some product knowledge then I will be happy to also follow up by email or by a phone call afterwards all right so we’re going to talk today about the wide array of products that
Wolf offers you to customize your cooking experience for your home and we offer such a great selection that we really think it’s important to cover all of the different options and and just touch base on those to make you a aware of your selection options so that you
Can really go into that process of determining what’s going to be best for your lifestyle with a little bit more knowledge okay and we are cooking some things in the product demo today so I promise you we are working on the smell-o-vision feature for our chat but
We’re going to go ahead and Dive Right In to what we want to cover today so we’re going to talk about a very specialty oven known as the wolf convection steam oven to start with and I am going to follow up with the other
Ovens as we go along in the demo but I want to start off just with a brief explanation of the the newest generation from Wolf on the convection steam oven and something that I want to point out is that this generation is now a 30 inch cavity all right option and is also
Available to be plumbed as well as a water cartridge feature and to touch briefly on what this oven does think of it as an oven first and then it has steam features so the magic of steam mixed with low temp heat to high Tempe is going to do some beautiful things
It’s also going to be able to do things without any moisture it’s going to do some things trapping moisture in the oven instead of letting it escape and from this programming which also includes over 50 presets of dishes and how it recommends to cook them as far as
The the mode the time the temperature the setting okay it really helps you along on many of those but it’s also an intelligent oven that’s very easy to operate the newest generation is a touch screen so when we wake up the oven we do have the options of navigating through the touch screen
And let me turn that timer off real quick that probe so we get to navigate through with that touch screen and we have multiple different styles to choose from that they’re going to pair with whatever the style is on the package that you chose if you’re pairing
It with another oven now I will tell you some unique things this oven does just to scratch the surface what about roasting a prime rib or a beef tenderloin slow roasting it for up to four and a half hours and telling it when you want it done not just how you
Want it done what about making some Bakery professional I mean it’s phenomenally beautiful artisanal breads with the addition of steam we’re able to replicate what the Corner Bakeries or that artisanal Bakery you go to for that favorite loaf of bread you can now do in your home we can also do things everyday
Things such as roasting some fresh vegetables so roasting at a high temp with steam and convection gives us a beautiful caramelization on the vegetable while it chars the outside and tenderizes the inside so you get a beautiful result on vegetables on potatoes um this also has a probe feature so I’m
Just touching base on some things this is going to give you the technology that restaurants have had for years known as a Combi oven in the home oven it is a convection steam oven now you’ve also got the ability without getting a separate Appliance out putting it on the countertop whatever that might
Be two be able to steam something eggs potatoes a lot a risotto lots of different things that you can make with steam but this is much more than a steamer now I will tell you I’m just touching base on that oven briefly today because that oven has its own
Introduction class so if you want to learn more about the wolf convection steam oven I encourage you to tune in for one of the virtual classes and learn more about that because we go into great detail on what that oven does and I will tell you it is a game changer it
Elevates your cooking to the next level in your own home and really opens up great possibilities for all those dream dishes that you want to prepare all right now I’m going to take something out of the oven real quick we’ve got some different foods going on today and one of them I did
We just did some chicken Supremes and these were done so these chicken Supremes were done on The Griddle to start to get us get a nice crust let me get that off real quick we use the probe sorry so we use the probe let me get
This with a cloth because it is hot to monitor the temperature of the chicken cooking okay so using a probe to monitor temperatures until the ovens when the meats are done is huge that’s a huge Advantage for the greatest quality of juiciness tenderness and nailing that temperature on those cooked meats all right
Now this was a chicken Supremes that we seared on The Griddle the wolf griddle on this dual fuel range and then we glazed it with a little bit of teriyaki and we finished it in the oven you’ve got this beautiful platter of roasted chicken so really really nice to be able to do
That set that back there out of the way so let’s talk for a few minutes about the dual fuel range and features that are available so this is a 48 inch dual fuel range with a double griddle if you love to entertain if you have a big family if
You have a lot of friends over the double griddle is a feature you might really want to consider simply because it gives you the greatest amount of cooking surface that’s ready controlled by a thermostat the biggest difference between cooking on the burners and cooking with the griddle
Is that when you’re cooking in a pan or our burner systems the dual stack burner systems are very even at what they hold the flame not getting too hot too cold but you are the thermostat you’re going to turn that pan up and down depending on what’s going on during the cooking process
The Griddle it’s controlled by a thermostat what that means is if I set it at 350 or 400 degrees then it’s going to stay there it’s not going to get hotter it’s not going to get colder when it dips just a few degrees it kicks itself back on just
Enough to recover it’s a slab of cold rolled steel which is much different than what we see in say Teppanyaki or a Japanese Steakhouse those are stainless steel griddles those have to be cleaned every day after every cooking use because you’re treating them like a steel pan okay and they cannot be
Allowed to get a buildup of food on them because of the type of Steel they are they will not be nonstick everything will stick to them cold rolled steel you treat like a cast iron skillet so you season it and you get it ready like a cast iron skillet and it performs like
That it becomes a very non-stick cooking surface so the anything you do in a pan with a small amount of oil you can do on The Griddle the biggest difference is you’re not going to have to turn it up or down You’re simply going to walk over
And flip the food every once in a while because it’s going to give you a beautifully caramelized crust oh thank you Gil so Gilda’s made some beautiful pizza for us we’re going to talk about with the ovens in a little bit all right so The Griddle feature is an awesome
Feature to really consider we also have an indoor char grill and the indoor char grill is going to give you the ability to with about a 10 minute preheat to be ready to char grill many different proteins from some chicken breasts some salmon some burgers steaks okay any of your proteins I love
To grill up some bread and have it with some fresh ricotta and honey or maybe I’m doing right now we’ve got Tomatoes coming out of the garden maybe I’m doing some grilled bruschetta with some tomato basil topping lots of different things to do I love to do grilled vegetables
For dinner from zucchini eggplant yellow squash asparagus lots of fun to be had on the grill and if you love to grill but you don’t want to go out in the Colder Weather and you want to have the ability to come home turn on the grill and have it ready in
10 minutes to cook lunch or dinner Hey that is a great choice for you as well so we’ve got the single griddle available in half the size about 12 inch griddle or you’ve got the double or you can also split between a griddle and a char grill feature and you can also do
Just a single on there so lots of different options on that to choose from and the Dual fuels are going to start at a 30 inch and graduate up to a 36 which is when you can start to add a feature 48 and 60 inch all right now what’s dual
Fuel mean dual fuel simply means that I’m using gas up top and I’m using electric ovens below now the beauty of it is that when we’re using electricity to even the heat our ovens in the dual fuel they stay extremely accurate to within one degree from what
We set it at okay now I encourage you when you do have this product installed in your home to take an ownership class whether it is online with us virtually or whether it is at one of your local showrooms because we teach you how all of those features work on your ovens
Okay when we talk about the ovens a day in regards to the dual fuel I’m also going to talk about the E Series and the M series these are all what we refer to as dual convection ovens they all have the same modes they have a little bit differing convection systems but they
Are all extremely capable to do what you want in your home we educate you on how to best use those so that you really get the most out of those all right now I want to go ahead and get some food going on the griddle so I’ve got some flank
Steak today and I want to make a little bit of fajitas okay I’m gonna have a party this afternoon I got some co-workers that are hungry and they want to have a little party and so we’re going to grill up so I’ve Got The Griddle heated up to about 400
Degrees all right and from there I’ve got some flank steak I’m sorry flank skirt steak that’s what you use for some fajitas normally okay and I will cook these whole and then I’ll slice them up when it’s party time so if they don’t lose any juices
And I’m just doing a little bit of Latin spice a little fun one Mike you know that um chili and lime seasoning everyone loves right now a little sprinkle of that with some garlic oh it is delicious maybe a little bit of that in on the veggies too so
We’re gonna get this on there now let’s see how nice of the caramelization we can get all right and we’re gonna get a little bit more we’re doing a high heat Oil we’re using some avocado oil now we’re gonna do some peppers and onions
So we’ve got a lot of stuff going on now here so we’ve got a lot of food going on but at this point now we’re just going to leave it alone and let the magic of The Griddle do its work Okay so now I want to go into a little bit of
Explanation on a few of the features of our dual convection ovens so in the dual fuel that is going to have an oven that is very similar to the M series Ovens that which are wall ovens it’s going to be the same features the biggest difference is that
You’ve got dials that are controlling the features as well as a touch screen full color touch screen display that pops out at your request with the push-ups and fingertips and you’re going to control the features of the oven as in modes and timers and probe settings and I
Didn’t mention yet but your dual fuel oven as well as your other two dual convection ovens are all Wi-Fi compatible which means we can use the Wi-Fi to something as simple as we’ve got a batch of cookies in the oven and we want to see how long is left on the
Timer maybe we’re roasting a tenderloin for dinner and we want to see what temperature it’s at so it doesn’t overcook if we’re out of the room we don’t hear it notify us that it’s done so it informs us about what’s going on by simply using the app we can also do some
Preheating even when we’re away from the home if you follow some simple instructions earlier in the day to confirm and to set that oven up so lots of really cool features to work with when it comes to utilizing that now let’s get these veggies a little turned
They’re starting to get a little bit of color on them those are looking good Oh it smells so good in here we go we’ll spread those around a little bit just another minute or so and we’re going to flip that skirt steak over just a little bit of oil on this side so obviously the dual fuel and dual convection ovens have bake and bake does
A wonderful job did some chocolate souffles earlier on bake they came out beautifully all right but those specialty modes Stone mode which is a hearth mode which will bake your pizzas and flatbreads at 550 degrees this takes five minutes to bake off this pizza okay maybe six if
You want it really heavily caramelized so you have the options of using the oven as a hearth mode oven up to 550 degrees with convection which will rival the pizzerias down the street okay you can turn out beautiful delicious pizzas or flatbreads in your own home so that’s
A fun specialty mode the chicken that we roasted today okay that was done on convection roast convection roast is giving you your heat from the top of the oven and the back of the oven that’s going to give you a greater caramelization on your meats and your vegetables and your starches if you’re
Wanting that crusty brown crispy bits okay let’s see how the steak looks oh those look awesome it’s got a beautiful crust formed on those really nice okay now caramelization roasting whether it’s something fast like chicken breast or potatoes or vegetables maybe it’s roasting a turkey for Thanksgiving okay
If I’ve got a variety of different ovens I’m going to pick and choose what I want to cook some of the things in I will tell you the ham or the turkey or the prime rib I’m gonna pick that dual fuel or dual convection oven every time
Because that roast mode just gives you a beautifully roasted whole bird ham prime rib whatever it might be leg of lamb and the crust is phenomenal so really really easy to work with and remember that probe system monitors that cooking process the whole time so having the ability to monitor the
Temperatures on something when it’s cooking to be out of the room when it’s cooking or roasting just makes cooking simpler now what about some specialty modes like you know making some bread dough to put in the convection steam oven maybe you’re baking a different bread dough in this
Oven in the one of the Dual convection ovens okay the proof mode which gives you safe temperatures for about about cutting the time that a roll or a loaf of bread or a baguette needs to rise cutting that time in half so that you can get in there quicker but you also
Get a better sponge a better oven spring out of that bread your bread just turns out nicer when it’s proofed at a certain temperature so just doing at room temperature can take a long time and sometimes doesn’t yield the best result so that gives us more ability all right now
What about something like dehydrate maybe you like to make some homemade beef jerky maybe you want to do some Citrus rings for some Garland for the holidays maybe you know we were talking today in the kitchen about doing some onion skins for a seasoning uh you know there’s so many different things
That you can play around with on the dehydration mode that you really don’t think about until you start diving into recipes and they’re like oh wow I can do that I can dehydrate strawberries bananas blueberries raspberries any kind of fruit I told you that I’ve got a bunch
Of tomatoes going in the garden right now you know hey sun dried tomatoes we we put into me plants so we need to go ahead and cook some of them so maybe we’re doing some sun-dried tomatoes in the oven wouldn’t that be nice okay all sorts of things to think about
So dehydration is a great one okay um here’s a game changer so convection convection on our ovens mimics how the professional ovens out in the industry that myself and Chef fan and Chef Gill and Ed have all worked with in that it’s heating only from the back of the oven
Because it’s only heating from the back of the oven that means that I have no top or bottom heat so I can do three trays of cookies three trays of cream puffs oh yeah I can do a lot of varieties of different baked goods I can even do some
Potatoes and vegetables I can do a multi-layer dinner from that so it doesn’t have to just be baked goods so lots of different options to play with when we’re talking about convection mode and I know some of you are thinking oh I had convection mode on one of my ovens
And everything burned up I didn’t really like it you know I just wasn’t sure how to operate it we teach you how that convection system works and how to adjust your time and temperature so you really understand what’s going on and you’re going to get the best use out
Of it okay so there’s so some guidelines or some rules that we teach you and if you follow those I will tell you things just come out beautifully with convection because it just adds to caramelization it adds to the Browning and the crisping okay beautiful beautiful baked goods to potatoes to
Meats lots of different things okay so let’s go ahead we got some tortillas on there we’ll kind of lay some of our steak out we’re going to slice this a little bit later but you can see see the caramelization on that meat is just beautiful came out really nice okay and then
We’re gonna come over and we’re going into take some of this caramelized peppers and onions spread that out on them now I will tell you having the double griddle in your home I gotta give you a little bit of warning okay you’re gonna have friends and family
That when they show up and you’ve got that griddle fired up and you’re getting ready to cook some dinner they’re gonna beg you to come around and help oh can I can I help can I oh that that really looks like fun can I can I
Help you I mean literally they are like ecstatic they love it okay so it’s almost a party tool if you will and that it’s so much fun for people to gather around people will gather around your island or around your kitchen just to get in there and play around and have
Some fun in the kitchen with you okay so there’s some cilantro we’ll sprinkle in some limes okay we’re gonna plate okay that was oh I think maybe 10 or 12 minutes okay I would be happy if I went to someone’s house and they served that for dinner
That’s just beautiful all right so we’ve got some fresh fajitas we roasted that chicken we did the pizza on the bake Stone mode so now I know some of you are saying okay well that looks fine but you know what what about cleanup okay that looks
A little bit messy and I I don’t know if I want to do a big cleanup after dinner every night so really as simple as this I’m going to go ahead and turn the griddle off because I’m done with it now but I’ve got a flat bench scraper what
Baker’s know is a dough knife okay and I’m simply going to scrape this a little bit and then I’m going to start on the corner pull this to me pull all that excess oil off The Griddle and eat food okay that goes in the sink
And we’ll do it with a dry utility towel we do a little wipe down and guess what that’s it that’s all the cleanup on that okay we do teach you how to do a deep clean when you do want to do a deep clean on it but on a
Day-to-day basis that is your cleaning okay turn off the ventilation enjoy your dinner enjoy your meal so something else that I want to point out on the dual fuel that is going to be a highlight that we’re going to discuss in the kitchen just a few steps away is the
Dual stack burner system all of the Wolf gas cooktops and ranges have the dual stack burner system and that means there’s two separate sets of ports that the gas is being fed out of when I turn the dial on to high I’m getting a high flame that’s gonna
Get hot very fast okay I’m only really using that for bringing water to a boil soup to a boil sauce to a boil okay too hot to saute with because it’s going to get that so hot so fast I’m gonna pan roast and saute on a lower setting but
That high setting really hot okay when I turn it to low it’s still fairly warm I can cook in that setting I can make some marinara I can make some chili I can make some soups I can simmer some sauces but still in the cooking mode when I
Turn it the dial around to simmer true simmer mode that’s actually going to a separate gas feed and that separate gas feed is a finer feed it’s a smaller port on the bottom of the burner and that feeds it much lighter fuel or a lower amount of fuel and because of that it
Can stay lit constantly no clicking on or off and in the lowest settings to hold your Foods warm your sauce is warm any of these that I just made could be held warm on there okay without scorching without burning here’s the nice thing so it’s so low
My hand can hover right above the grate okay that’s about 120 degrees maybe 130 degrees so extremely low temperatures all the way up to fairly hot temperatures for boiling and Searing and blackening so all of our range tops ranges have that feature and they look similar in size we identify in the
Ownership experience the different sizes your most powerful your second most powerful it’s a graduation of power around from the most powerful down to the smallest and we pride ourselves on being a distributor that we are very much about making sure you understand what you have that’s why we really encourage
You repeatedly to take that ownership experience so that you’re getting the most out of your appliances okay so I’m going to go on down to the next kitchen and down here we’re going to talk about the Contemporary cooktop so and the induction cooktop now the Contemporary cooktop
Is a drop in cooktop okay it has the dual stack burners we just talked about they are as smart a smaller power level still plenty powerful enough to cook with and to really get the most we can out of that whole experience in your home the difference is that these are going
To drop into the top of the counter range tops are going to slide in so the controls are going to be on the face this cooktop comes in a 30 and a 36 inch and a 24 inch okay in contemporary and professional stylings the Contemporary cooktop which we have just out of camera
Range is flush to the countertop and it has control knobs that poke through your Cabinetry okay you don’t actually see the face of the cooktop on the front it’s just the controls so that contemporary cooktop is going to mimic kind of what a range Top’s like okay so
The majority of our cooktops the controls are up top okay and today I’m going to cook a little pasta I’m going to do a little chicken scalloping and we’re going to use the Contemporary cooktop and we’re going to go ahead and start to get this pan hot
And because I’m not turning it all the way on high as I said you want to preheat your pans on a moderate level okay that means medium not high not medium high give it a couple of minutes to heat up okay and you’ll see we’ve got a little bit of
Vapor coming off of the water here for the pasta so we’ve got some Firefall pasta some boat bow tie pasta if you will and I wanted to show you just how quickly even from room temperature water how quickly this comes up to a boil so I’m going to turn it on
And we’re going to go right up a high so we’ve talked about gas for the last few minutes let’s talk about induction for a moment what’s going on with induction so this is technology that’s using magnetic motors to cause high frequency vibration and what I mean by that is
It’s not really a frequency that you hear if you feel the handle of the pan you you feel a very fast vibration not that shocks you in any way even like that you just okay I can feel a little bit of vibration but it’s causing friction inside the metal composition of the pan
And that friction is heating the pan up immediately so if I put a pan like this on the induction and place it on there and put my hand in there and turn it up to high I last maybe five seconds maybe most of the time it’s four seconds and
I’ve got to remove my hand it heats up that fast now what’s really nice is it doesn’t just heat up fast it’s also heating up and dropping in temperature and in controls that mimic my gastric top so in the controls when I’m turning the the heat
Level up and down it very much mimics the flame on the gas cooktop so you have the controllability of gas okay and that I can drop it so right now I’m at a full boil okay so that fast to bring water tube oil for pasta for potatoes but then I turn it
Off watch I just got a little bit of steam it’s already stopped boiling so then maybe I want to turn it back up maybe I just wanted a simmer so I’m turning it back up okay now I’m going again I’ve got moderate bubbles it’s that reactive to
Your touch on the heat levels and how it responds now on top of that we’re talking a safe cooking surface okay now when we go to clean we want to make sure that the emblem that’s letting us know that there is hot surface before we do any cleaning of this and
It’s a very easy cooktop to clean up only takes about a minute and a half two minutes most to clean this cooktop however we want to make sure that it’s not hot anymore not because it’s scorching hot like a traditional electric cooktop but simply it’s going
To clean up better but I want to show you this okay so I’ll turn this back up to a boil okay so we’ll let that get up to a boil and then and this is a viscous boil this isn’t just a oh it’s boiling it’s like a rapid violent boil okay now
Well let’s see if the surface is hot okay you wouldn’t even think about doing that with this cooking surface so safe little grandchildren little children in the family it’s going to be safer and that if they’re running along and they like to do this with their hands along
The countertops they might touch it and oh that’s hot but it’s not going to burn their hand because when we touch something and it is it’s hot we move our hand but that’s not hot enough to burn your hand at just a soft touch so very nice to be
Able to work with that now we’re back to a full boil okay so let’s drop that pasta water out of pasta let’s drop that pasta in the water okay and I’m going to set a timer I’ve got a timer built in on this We’ll set a timer for that now the heat level on my pans nice so I’m going to go ahead and start that saute and I want to do a little bit of salt with the water give it a little bit of seasoning okay now let’s put a little bit of olive oil in
The pan here and I’ve got some scallopina chicken some really thin slices of chicken that I’ve already seasoned and dredged in one and flour just an all-purpose flour okay nothing fancy but these cook quickly and are going to be really nice and light and crispy and we’re going to make
A nice white wine sauce to go with them okay set that aside now with the addition of a cook an induction cooktop or a gas cooktop you are going to have the ability to do a downdraft from wolf or from best you can also do something that’s not quite as big as something
Like this professional style ventilation okay you could do a more contemporary styling you might even be able to do one of the flush mounts in your kitchen that is up on the ceiling if your ceilings are more than say 10 foot so you have a greater variety of ventilation you can work with
Um when you’re doing a little bit lower power on the cooktops okay they’re not generating as much heat they’re not generating as much food particle reaction still doing a great job on the cooking process but nowhere near the intensity okay so we’re going to put in a little bit of squash
To go with that and now when we talk about the induction cooktop I do want to point out this model that we’re currently using has slide controls along the front when you visit a showroom at this point in time you’re going to be introduced also to a new generation of induction cooktop
And that cooktop has the ability to inside each cooking Zone that you are working with you’re going to have the ability to modify to put a hold on a cooking time to have sensor cookings to have a individual timer for each Zone just lots of specialty modifications and
We’ve gone and made the zones instead of and encircled with a circle figure they are now going to be a square because visually it’s easier to line up a pan on that so the conviction configuration is very similar on the cooktop but the controls are becoming more advanced okay now
Give a little bit more olive oil for this chicken oh looking awesome got a nice crispness on that chicken now and move those squash around a little bit and we’ll get rid of that so the induction you’re going to have the ability to do a 30 or 36 inch
On that new styling okay and there will still be a 15 inch module available in the traditional styling that we’ve got right here okay now you’ve got a wide variety of options on the gas cooktops drop in you’ve got a wide variety of this generation as well as the new
Generation induction to choose from and I know it can be a little bit overwhelming that’s why I would encourage you to visit or call one of your local showrooms and with Roth living and ask some more questions get some specifics on some of these questions that you have so that we can clarify
Now I’m going to continue to work on this pasta but I want you to look behind me this is a E-Series oven that we talked about earlier and the E-Series oven this is one of the Dual convection ovens okay and what I mean by that is not that
It’s a dual oven this is a double oven but we have dual convection fans okay because we have dual convection fans that means that we’re able to circulate the error more evenly when you can circulate the air more evenly those recipes that tell you to cook a cookie or a cream puff or
Something for so many minutes and then switch it around and switch racks and rotate pins okay you’re not going to do that anymore that is not necessary with this our cooktops are so even that I’m sorry our even our ovens are so even you’re not going to have to go switching food
Around in there and that’s nice because I think that a oven should be all about how even it Cooks how well it Cooks your food and with all the features that we talked about earlier put in a little bit of Capers to go with this the features that we talked about
The conduction roast the roast mode without convection just that slow and low top sort top heat Source where it’s giving you that beautiful crust on the turkey the prime rib right we’ve even got some Gourmet features in here that help you if you’re not sure how you want to cook
That chicken that prime rib that turkey it helps you it helps you decide how you want it how you want to cook that with the Gourmet it leads you through step by step on how to do that we’re gonna add a little bit of white wine all right
Give that pasta a little stir okay so now I want to point out I’ve got the E Series oven in camera range right now one of the biggest notes you’re going to notice or differences is the E Series and the two models it offers are going to have the commands of bake
Roast Royal proof on this side it is an interactive touch screen as well full color screen and then your numbers and your enter and clear over here This spells it out spells it out also confirms it the M series is going to operate on the majority of the models with the touch
Screen in the center of the oven okay if you’re comfortable operating your cell phone you’re going to be fine with something like that so you can do lots of different control styles from just punching these temperatures timers confirm okay or you can choose to do the touch screen with the M series now
And have that technology where you don’t have the writing along the face one thing that I do want to point out both of these ovens are extremely comparable in convection the latest technology is going to be with the M series ovens and the dual fuel because they have the
Latest generation of convection that was just developed last year and put into use and in production by wolf this past this past January Okay so you’re going to have the latest technology if you’re going to have the best of both worlds you’re going to have all those features but you’re also going
To have this newer convection system which they get down to very very technical aspects of how you gauge the doneness of something and they have special photography that takes pictures of the millionth pixel of a crumb just just to see how evenly these are cooking and
The beauty is you know through all this research that wolf does to constantly improve and I will tell you they don’t come out with a new convection system every year every year and a half they take their time they’re doing it the right way so this is about every seven or
