Today we’re making three fried chicken sandwiches from three of the worldwide web’s most popular chefs each has their own Vibe each has their own Specialties but today we’re going to pit them against each other to see who makes the best fried chicken sandwich all right so

We got two Josh’s on the docket today go figure so we’re going to spread them out starting with the king of shaming fast food establishments the one and only Joshua Papa Weissman all right so let’s start with Josh’s sauce Josh made a Korean fried chicken sandwich kind of

Known for its sweetness and its spice so the main star of the show is this Goa Jang which is just a fermented Korean chili paste that is a little sweet little spicy and it’s what’s going to give this sauce most of its body vinegar dark soy mirin Brown

Start with the sauce this is a cool technique we’re basically making a dressing and aoli whatever you want to call it in a jar I’m actually going to start with an egg yolk in there then we got some buttermilk sour we have some shalot I’m going to do

A little bit of lemon juice here pour that okay drop the lemon on the floor we’re going to run that back little piece of garlic here that’s in there kosher salt pinch of black pup creamy cow’s milk blue cheese I’m just going to cut this up because just like

Brian said the pre- crumbled store bought stuff isn’t isn’t nearly as good as just buying a little wedge like this and um adding it yourself so to recap you’re going to want to pop everything but the blue cheese in into that jar trap the aelk with your immersion

God I mean that’s one definition of blue cheese Mayo blueberries have broken down for the most Part it’ll thicken as it cools as well and we couldn’t make this sandwich without talking about these crazy pickles these are literally blue Kool-Aid pickled onions that I made with this blue Kool-Aid mix and they actually do this in the Mississippi Delta with all sorts of different colored koolaids

To like actual like whole pickles oh no oh yeah uh yeah it’s a thing Kool-Aid pickled onions all right we have our blue heat Takis and um sadly I’d be lying to you if I said that I haven’t tried these before that doesn’t really look like that but

Very citrusy very very very crunchy don’t know if you can hear that that was just an excuse for me to eat another one just a little bit of Flour just look at this all right this is where things start to get a little unhinged mythical Josh opted for chicken breasts rather than thighs so I just marinated those in a little spirulina laced seasoned buttermilk overnight and uh this is what we’re left with so here we just got a

Milk and finally the Takis dude it’s the vulc sign that’s one breastal and this is why we wait till the end so that our blue oil doesn’t affect the other Sandos not too much remember these are takis after all they are seasoned all right that Madness is over we are done with all of the components to our sandwiches let’s Build Oh All right the moment of truth is upon us all of our Sandos are built and ready to go let’s eat them let’s go Joshua weissman’s you got your Brio bun SLO on both sides long pickles and your Korean barbecue potato starchy chicken got to flip this over all right got to unhinge

Hot sauce for a long time butter lettuce nice for color I can’t really you know taste it on there because there’s just so much going on so many strong spicy flavors but I mean dude that blue cheese sauce oh it really does make it I definitely have a love for like saltier

  3. I appreciate how JW's recipes are never too crazy but he always has a secret weapon that he utilizes to make sure his recipe stands out. Like he'll incorporate a unique sauce or ingredient to make the food go to the next level. And I appreciate that in a world full of food that doesn't often stand out from the rest in its class.

  5. I appreciate your descriptions of what and why you liked each. I feel confident in which I would choose, because you gave enough for me to make that decision.
    I'd go with J W, but also think it a bit too sweet, so I'd use less of that sauce. I can't stand the flavor of mold, and generally don't like spicy hot as a primary flavor. If I was to make that one, I'd double down on the cream sauce to mellow the overall spicy and pair it with a drink that does similar. (perhaps a mint milkshake or an iced thai tea?)
