This week we’re all about seafood! Our Grilled Shrimp Pasta with Mint Pesto and Peas is simply gorgeous to look at and delicious to eat. It is also the poster child for using freezer and pantry items to whip up a satisfying meal in minutes. It quickly marries a favorite pesto of mine with low calorie, high protein shrimp, studded with a smattering of that great pantry standby, frozen peas. I usually keep wholewheat spaghettini in my pantry which takes under 5 minutes to cook, so if like me, you have pesto in your freezer too, by the time the shrimp are grilled, everything else will be ready to toss together.

I’m Anthony and welcome to the cook for your life YouTube channels so they were going to be making shrimp we’re going to be tossing them in a really yummy pasta that’s tossed in its own right in a mint pesto in almond pesto actually we’re so it has a lot of hiney high nutrient

Items in there going for it so the first thing I’m going to do is I’m going to mix a little bit of olive oil with some lemon juice am I going to swish it around a little bit and I got to put the shrimp in there now this will this is

Just a sort of copán and also to start the cooking process because there’s want them to marinate a little bit into that and that lemony mixture I’ve got a little bit white and that’s the acid in the lemon which has started at them cooking so now I put a piece of this is

Really fabulous grill but honestly we don’t want to spend our whole day cleaning it so I put on this now great thing about shrimpers it takes no time at all to cook so okay so be first for a minute we don’t get too too cooked okay great alright so

Now we’re going to put together the pasta which I already cooked so I’m putting some pesto in the bottom of our Bowl and I going to toss the pasta it and I’ve also got a little bit of hot water from the past risen to loosen up

The pesto itself and this is always a good idea no matter what pesto you’re using is to add a little bit of the pasta water so it’s not too heavy we have some pasta here and some frozen peas which which we cooked separately so actually I find it’s fabulous just to

Cook them in with the last two minutes of the pasta now when you make a pasta like a spaghettini like this it’s always a good idea to cook it about a minute less than it states on the packet that way you’ll be sure of getting it al

Dente now this is about I am I’m always a bit my husband always accuses me being mean with the with the pasta because I always put in two ounces of person dry weight and that’s about right so that makes flip-up the right so we have here probably enough

Okay that’s it now the it’s what the pastor always needs to be kind of hot off the press for this but it’s easy and so that literally is it
