    Slow Cooker Vegan Sausage Bean and Kale Soup

    Ingredients

    • ⁠4 plant based sausages
    • ⁠1 bunch Kale
    • ⁠2 cans white (cannellini) beans
    • ⁠4 cups vegetable broth
    • ⁠2 celery stalks (chopped)
    • ⁠2 carrots (chopped)
    • ⁠2 cloves minced garlic
    • ⁠1 teaspoon thyme
    • ⁠0.5 teaspoon red pepper flakes
    • ⁠3 bay leaves
    • ⁠salt and pepper to taste

    Recipe

    1. ⁠Heat 2 tbsp oil in a skillet. Chop sausage and brown on both sides (approx 5 minutes)
    2. ⁠Add sausage, beans, broth, spices, carrots, and celery to crock pot. Place 3 bay leaves on top.
    3. ⁠Cook on LOW for 8 hours.
    4. ⁠After 8 hours, stir in chopped Kale. Cook another 15-30 minutes until Kale wilted. Serve!

    Some notes:
    1. I used plant based sausage but this would work with andouille or some other sausage.
    2. I served with baguette slices and butter. Definitely a high point of my life walking out of the grocery store with leafy green veggies and a baguette sticking out of a shopping bag like a cartoon

    My wife just made this a few nights ago. Never really been a fan of kale, but this soup was great and the kale was a great compliment to the beans.

    Okay, I’m definitely going to give this a try. I’ve never tried plant-based meat before so is there any brand in particular you recommend? And is it something I can get at my regular grocery store or Walmart?

    I love sausage bean soup so I’m thinking this might be a good gateway into incorporating some plant-based foods into my life.

    I do a soup on the stove that’s sausage white bean and kale. Done pretty quick and doesn’t need the slow cooking.
