This is a traditional stew from Spain, you make a broth with chorizo, morcilla (similar to black pudding) and pork belly. Then add carrots and green beans, and white beans. You can also add a serrano ham bone if you have it.
Meanwhile it slow cooks, you get some chopped fresh tomatoes, onions, garlic and peppers in a pan with some olive oil, salt, paprika and cumin, until nicely cooked, and you add it to the pot of meat to thicken up.
I added skinless chicken thighs (which is not traditional from the recipe) and lowered the fatty meats amount to lower the fat content in it. I also added a pinch of saffron but this is not from the original recipe either.
Perfect for this cold weather. So comforting.
