🔹 ¼ cup fresh lemon juice Juice of 2 large lemons
🔹 1 to 2 teaspoons dried oregano
🔹 1 large garlic clove minced
🔹 ¾ teaspoon kosher salt
🔹 ¾ teaspoon black pepper
🔹 ¾ cup extra virgin olive oil
For The Chicken And Veggies
🔹 1 large red onion, halved and sliced into ½ -inch pieces
🔹 1 medium zucchini, halved and sliced into ½-inch pieces (half moons)
🔹 1 large orange bell pepper, cored and sliced into ½-inch thick slices
🔹 1 large tomato, cut into 8 wedges
🔹 Kosher salt
🔹 ground black pepper
🔹 6 to 8 boneless skinless chicken thighs
🔹 ¼ cup pitted Kalamata olives
🔹 ¼ cup pitted Castelvetrano olives
🔹 4 ounces feta cheese, cut into chunks

– Everyone loves a sheet pan dinner. This one is an extra level of delicious. My Greek sheet pan chicken. Oh my gosh. It’s so good. The beautiful thing about a sheet pan chicken dinner is that it’s a sheet pan chicken dinner. Do I need to tell you more? First, let’s slice up some veggies. I have zucchini. So we’re gonna do half moons on the zucchini. Toss that right in your sheet pan. Bell pepper. Any color you like.

I just happen to have the yellow today. Go around the core. Thank you for coming. And now we’re just gonna cut into strips. On the sheet pan it goes. A wise woman once said, “A sheet pan dinner is the way to a man’s heart.” Did she really? Did she say that?

We don’t know. – If you could- – Men, comment below. We need to know. (laughs) (laughter drown out Drew) One large tomato. Let’s core it. Then we’re gonna cut it into wedges. There we go. Don’t you just love a sheet pan dinner? I mean, what could be more exciting in life

Than a sheet pan dinner? You tell me. Then we’ve got some onions. How colorful and bright this looks already. One of my absolute favorite flavor makers is this all-purpose sauce called ladolemono, which is basically a Greek lemon sauce that I absolutely adore. I also use it as a dressing.

So in this case, we are going to flavor our entire sheet pan with this magic sauce, which begins with 1/4 cup of freshly squeezed lemon juice. Garlic. One or two garlic cloves. A little bit of dried oregano. A little kosher salt and a little black pepper.

And then you’re gonna whisk this party together. Then you’re gonna grab some good Greek extra virgin olive oil, and you’re gonna go ahead and keep whisking. And as you whisk, you’re gonna drizzle this olive oil, and keep whisking. This I can drink. It’s like if there is a dressing or a sauce I can just chug, it’ll be ladolemono. Right, Kate?

Kate agrees. Let’s see. (smacking lips) Mm-mm-mm. Yes. Salt and pepper on your nice veggies. And then we’re gonna go ahead and pour just a little bit, about 1/4 cup on the veggies alone. Then we’re gonna go ahead and toss, with clean hands or a pair of tongs, whatever floats your boat.

I tend to feel like my hands give me a lot more leverage. Zucchini overboard. And then we’re just gonna spread them out. The beautiful thing about a sheet pan chicken dinner is that it’s a sheet pan chicken dinner. Do I I need to tell you more? Profound. Right, Drew?

Go ahead and season the chicken thighs directly with kosher salt and black pepper on both sides. And then I nestle them in between the veggies. And they can snuggle next to each other as long as they’re all touching the pan nicely, as much as possible.

We’ve got kalamatas and we’ve got some green olives. I told you it’s a flavor party, didn’t I? One big block of feta. I’m gonna leave my feta in chunks and just kind of tuck them in between. Look at this y’all. I mean it’s not even cooked yet. Hold on. Don’t go anywhere.

You wanna see this. The magic of a sheet pan chicken is you put in the oven, and then you go ahead and enjoy yourself a glass of wine. Here’s your ladolemono sauce. You’re gonna dress this chicken party with the rest of it. Going in the oven 425 for about 35 minutes or so,

Or until the chicken is fully cooked through. I love the lemony, garlicky Greek flavors. Oh my gosh, and it smells like heaven. Oh my gosh. It’s so good. I told you it was a flavor party. And it is.
