I prefer to serve this as a killer side, but you can also enjoy them as a light main course, or chop them up to add them into other recipes. Cater to a couple different dietary options or you just love mushrooms I’ve got you covered so let’s do it we are going to kick things off by making the jalapeno popper stuffed mushrooms we start with pork sausage cream cheese green onions those diced jalapenos and then we’re going to add the shredded
Cheddar cheese and a healthy dose of my fish and veggie rub it almost gives it like a ranchy filling flavor so think like jalapeno popper Ranch stuffed mushrooms they’re unbelievable we get that all Incorporated once you have that done you’re going to drizzle the mushrooms with some olive oil and then
Spoon The Filling into each mushroom cap now these are baby portabellos but you can also use white mushrooms those are ready to go let’s move on to the marinated and grilled mushrooms now I call these mushroom steaks I am aware they are not steaks but the flavor that
You get on these are so rich it has so much Umami flavor it’s incredibly satisfying now we remove the stems and also the gills of all of the portabello mushroom caps and then make our portabello steak marinade this is kind of an Italian style marinade with olive
Oil and parmesan balsamic lots of garlic salt and pepper Italian seasoning now if if you are not into the cheese if you’re doing a vegan version of this you can skip the parmesan but I highly recommend it it’s so delicious gently toss that together in the bag now you want those
To marinate for about 30 minutes not too much longer let’s move on to the Burger caps again they’ve been dest stemmed and had all the gills removed I’m drizzling with olive oil and seasoning with my beef rub since these are going to kind of replicate a burger experience we want
To keep the seasoning simple the mushroom stuffed caps are are going to go on the indirect heat side of the grill first they can kind of cook low and slow the mushroom burgers and the steaks are going over the hot coals those are going to get a nice sear on
Both sides now because our mushrooms are not necessarily have to cook to a certain temperature we’re really looking for texture here you want some nice dark Char some caramelization some color on the outside if you like softer mushrooms cook them longer if you want them to
Have a little bit more texture cook them for a shorter period of time and everything likes to come off around the same time they’re all ready to go our jalapeno popper mushrooms are off the grill I always like to top these with a little bit of fresh green onion I think

Wow! These look great. I think I'll give the stuffed caps a shot, but probably without the jalapenos, since my stomach is a delicate flower 😂 Baby portabellos are sold locally as creminis. I cook mushrooms SO many ways; a tip I got re pan frying is to start in a dry pan for better browning and to add butter and garlic as a final step. The other tip from a chef is that it's a myth that you can't wash mushrooms. Studies show that they absorb negligible water, which quickly evaporates during cooking.

You had me at mushrooms! I love them any way I can get them. I also love how you prepared them in different ways. I am 100% carnivore but sometimes I need something lighter and the mushroom burger fits!

I use mushrooms as a main side for steaks. Half stick butter in pan. Salt and then saute , half way thru I add a half of a can of ale.

I do my portobello with a mix of italian dressing, Parmigiano cheese, and bread crumbs, then put them to the smoker
One of my absolute favorite meals is baby portobello mushrooms in a smooth rich red wine sauce next to some garlic mashed potatoes, roasted lemon pepper asparagus, and a medium rare NY Strip about an inch and a half thick.
I cook mine in a bong!
