
I don’t have enough freezer space anymore so I was wondering how long the unfilled macaron shells last in fridge or at room temperature(in an air tight container) I need to store around 5 days or longer if possible. biggest concern would probably be the texture.
I see online that filled ones(I use buttercream, just butter and powdered sugar) last around 3 days in the fridge. Thanks in advance!

Is the powdered sugar you’re using contain corn starch as an ingredient? After a few days in the fridge unfilled, the shells were chalky and not very good. I had just switched powdered sugar brands and didn’t realize there was such a difference between powdered sugars.
If you’re using a quality powdered sugar, I think unfilled shells can go 5 days in the fridge. Not sure I’d go longer than a week unfilled, though. It may need more time than normal to mature once you fill it.
I have a few French method batchs I made a few days after Christmas that weren’t pretty enough to sell but super tasty. One is a vanilla shell with a cream cheese filling and cherry compote and the other is a chocolate shell with a peanut butter Nutella filling.. I’ve been taking one to work everyday and they are still delicious. To be honest I have found I prefer them after weeks of maturing (soft) but they definitely keep for a good amount of time in the fridge, you’ll be safe at 5 days.
Also, I had a batch of shells I did last week that I planned on filling right away but had a family emergency come up. They’ve been at room temp in an air tight container and I filled them today, they were still good to go and tasted fine.
