I made the Rich and Hearty Mushroom Bolognese and absolutely loved it. I didn’t have red wine, and used about 1 3/4 cup veggie broth and 1/4 cup vinegar, so I need to make it again properly.

I thought the flavors were incredible. I would cook it longer next time because I felt it still had a tomatoey taste rather than it being cooked down and melded together with the other ingredients.
