used my day off to bake with the bag of fiber gourmet flour just collecting dust in my closet! I made ladyfingers with FG flour which turned out great, subbed out flour and sugar with the FG and a stevia/erythritol blend. that portion is about 250 cal which is not bad considering i used full fat mascarpone and heavy cream (but used much less real sugar and subbed out the pastry cream for a lighter version made with milk and cornstarch.) second endeavor was sour cream and onion biscuits, subbed the sour cream for Greek yogurt cuz it’s what i had on hand, and switched the AP flour with the FG flour, 284 calories each and sooo tasty. Texture is pretty good considered this isn’t supposed to be used for breads, the crumb is the tiniest bit more moist and cakey but still so delicious. Still pretty indulgent baked goods with all the butter and cream but a fun experiment in using the FG flour!
