
I just bought these fresh from a vendor & my eyes are ALWAYS too big for my stomach & I’m worried they’ll go bad. Can I freeze or place them in the fridge? I’ll be eating them daily but I just realized I’m not sure if I should just leave them out on my countertop or not 😅

Leftover rice cakes should ALWAYS be frozen (well, they’ll stay okay at room temp for a few hours but still…) They harden or dry out rather weirdly if you keep them in the fridge. Just take them out and let them thaw overnight whenever you want some for your breakfast/snack.
My parents always freeze them and let them thaw out at room temperature on the kitchen counter when they want to eat them.
I can tell you for sure those freeze quite well! I get those exact tteok from Greenland in Vegas.
My family does microwave them though, for like 20 seconds after they defrost.
I’d suggest individually wrapping them and freezing them! And I do microwave too, like 10-20sec, but after microwaving, don’t let it sit (they’ll harden quickly) so eat right away when it’s warm and chewy!

I think it’s in our nature to just go ahead and freeze anything you feel like lol

steamer pot will do. But ‘sticky'(~찰~ or ~찹쌀~) rice cakes can be too mushy.
I always freeze dduk! I just individually wrap them and pop them in the microwave when I want a piece.
Yes, my mother-in-law always sends them to me frozen.
Sidenote, when she first started sending them to me, she would send this one that was the size of a small loaf of bread, so I would slice it and put it in the toaster and then spread strawberry jam on it. Maybe because I missed America just a little bit, but it was really good. My in-laws all laughed at me until they tried it. Now they all have toasters.
Yup my mom always freeze them and re-heat with microwave or put them in the rice cooker. In my opinion, rice cooker is better because rice cakes re-gain the texture and taste to almost 100%
