I couldn’t figure out how to edit my previous post, so I’m just going to post it here. I’d like to thank everyone for their input on my previous post. When attempting to stay as true to the original recipe as possible, I ended up using the following ingredients for my father in-law’s family chili recipe:

1 green pepper diced
1 red pepper diced
1 yellow pepper diced
2lbs ground beef
1 large yellow onion diced
1 Tbs worcestershire sauce
Salt and pepper to taste
Added about 4 gloves of garlic minced
2 packets of McCormick’s original chili mix
Settled on 3 6oz cans of tomato paste
Added 1 16oz can of fire roasted diced tomatoes with liquid
2 cans (1 dark one light) kidney beans. (retained liquid with one and drained the other)
Added about 8oz beef stock to loosen chili

1. Brown the ground beef with the onion and peppers.

2. Drain fat from beef mixture . Salt and pepper to taste and add worcestershire sauce.

3. Add minced garlic and cook until fragrant. Add packets of chili seasoning, stir well.

4. Move mixture to slow cooker. Add remaining ingredients and stir well.

5. Cook on low for 6-8 hours.

She’s thick, but that’s how he liked it 🙏
