Rate my sous chef chives. Be as harsh as you can. He needs some humbling in his life.

    Cuts on bias, uneven size. Some white pieces. See if the chives bled on the board. You can also call him out for not letting them dry before being put in a container.

    They’re sharply cut with very minor bruising so that’s good. But about 50% of them are uneven. That 50% goes in the garbage. And he gets to be the one to either pick them out, or start over and do a more even job next time.

    His knife needs to be sharper, the cuts need more uniformity. Tell him to lay off the hooch when on the line.

    Not uniform, too thick. Why is the knife in the picture. Tell them to buy a god damn bench scraper. They need to pick through the chives better before even cutting them. They should be all a uniform color and some are looking a little on the yellow side. Looking even closer there is smashed plant matter on the board too. Ask them why they are such a failure in life as a sous that they are cutting their own chives and haven’t mastered such basic shit and trained the apprentices or prep cooks do the bitch work. And OP if you are the Chef why did you hire a sous that cuts such piss poor chives… DISCLAIMER: OP did say to be as harsh as possible.

    Let’s see yours when you were a Sous. Have your Chef put your knife skills on blast in a reddit forum. How about YOU teach the Sous proper knife work instead of asking others to rate his work.

    Some pieces still connected, uneven as hell. Those can’t be chives because we don’t keep chives like that in the kitchen.

    Sharper knife slight bruising, uneven sizing.
    Definitely in the top chives in this sub but the skill level in here is on the floor.

    Sous chef of what kinda venue? Average venue yeah good work.
    Fine dining establishment on the lower end of skill.
    But at the end of the day no one’s gonna care all that much unless it’s a very high end restaurant where perfection is priority.

    Personally I don’t think the knife is the problem like some have said. You’d see more bruising at every cut edge.

    But this looks like poor technique. Which is why they are so uneven.

    I’d give his skill cutting these at 4/10. I’d say +/-25% variation from your ideal size is acceptable. This is more like 200%. Some cuts are like 2mm some are 8mm.
