  1. Stewed Cod fish (Baccalà in Umido)

    Ingredients:
    (For 2 persons)

    -800 grams baccalà
    -1 stalk of Tropea onion
    -70 gr cherry tomatoes
    -20 gr olive (in oil)
    -Parsley
    -2 spoon tomato sauce
    -salt
    -cooking oil

    How to prepare.
    -First wash the cod fish/baccala ( I used fresh then I washed 3 times)
    -Cut into pieces
    -Chop tropea onions and cherry tomatoes
    -In a pan put little cooking oil
    -Stir fry onions for a minute
    -Put cherry tomatoes and cook it for a minute
    -Put cod fish/baccala
    ( fish release water)
    -Put parsley and season it with salt
    -Cook it until the fish become tender or 15 to 20 minutes
    -Serve
    (NOTE) the stewed baccala remain the liquid or sauce. Don’t throw it. Take out the baccala fish from the pan. Just boil pasta and mix it with the sauce. It’s really delicious
