📝 Ingredients:
– 250 g ( 8.8 oz) of quality spaghetti (preferably fresh pasta);
– 300 g (10.6 oz) shrimps, or to taste;
– 20 ml (1.4 teaspoons) olive oil;
– 10 g (0.35 oz) of salt for boiling the pasta in 3 liters of water;
– 1 teaspoon of salt for the sauce;
– 5-6 mosaic peppercorns;
– 1/2 teaspoon chili and garlic flakes, or to taste;
– 2-3 cloves of garlic;
– 1 bunch of fresh parsley;
– 50-60 ml (1.7 – 2.0 fluid ounces) white wine;
– grated zest of bio lemon;

While the water for the spaghetti starts to heat, we’ll prepare the shrimps. Remove the heads, Peel the shells using a fork just like I’m doing, And clean the shrimp very well, leaving the tails on, for some of them. For a gorgeous flavor finely chop 3 cloves of garlic
And parsley tails to complement the shrimp and cherry tomatoes. Grate the peel from an organic lemon, this will elevate the taste of the shrimps Now that the pasta water has heated, add salt to the water, and continue with the sauce In a roomy pan add some olive oil and start cooking the shrimps
Add the mosaic peppercorns, and the finely chopped garlic and parsley tails Now add the cherry tomatoes And some greater chili peppers which will bring your pasta to another level Add a pinch of salt and let the shrimps soften for maximum 2 minutes
The garlic, olive oil, chili pepper, and tomatoes blend into a creamy source Finally, add some extra lemon zest And a splash of wine, Turn up the heat to let the alcohol evaporate, leaving behind the grape flavors When the sauce is almost ready, Start cooking the pasta,
We will need a very nice al dente spaghetti, So boil based on the recommendation from the package, In my case, the cooking time was 3 minutes in total After 2 minutes boil, I add the pasta over the sauce And let it simmer for a minute to absorb all the flavors.
Add a bit of pasta water before finishing the emulsion and some fresh chopped parsley Plate your pasta, creating a nice nest for the shrimp For a nice plating arrange the shrimp as you desired, And top it off with chopped parsley This is the moment of truth, A testament to the labor of love
