
BBD Dec of 23 compared to May of 25. I saw a lot of people saying things like, they are the same, same taste but not as spicy, doesn’t taste the same at all and so on and so on. Not sure who’s using it for cooking and who is using it as a ketchup replacement like me. I didn’t believe the internet, that it was going to be different and thought it was the herd mentality. I knew it was different the moment I smelt it. Doesn’t taste the same either. Old was bright and crisp, compared to the new which has a more dark and robust taste. The tobasco sriracha doesn’t come close to either and tastes bad. Ordered some underwood , but I have my doubts. Also, my water bottle is better than a Stanley.

Nice post. IMO, no other brands taste like Huy Fong. Let us know how Underwood compares to the original.
It was decent but could never live up to the hype for me. Xanthan gum bothers my gut too, so my options are limited to a few companies that don’t use it. Either way, most people are just chasing nostalgia in trying to find a matching option rather than appreciating new tastes, since much of their enjoyment from the OG Sriracha came from the hype and social connections it created.
Didn’t they replace the distilled vinegar with acetic acid? Also the peppers are from a different supplier. Gonna have to try it myself and see.

How’s everyone feel about Trader Joe’s sriracha? I’ve been getting it for years instead of the huy fong stuff and while it tastes different I feel it has similar elements and the flavor is pretty dang good.
IIRC the sriracha factory is having some supply chain issues leading to the use of some different ingredient resulting is the flavor difference.

This is why you don’t screw over you’re main supplier.. The only one I’m going to miss from the old school Sriracha is the chili garlic sauce. 🙁 That was an ingredient in a lot of what I ( Especially meat and fish ) make. Sigh, I’ll find a substitute some where, maybe better. However that sauce really got me experimenting with food again it wont be the same.
There’s been posts of ppl who have found that they screwed their relationship with their original pepper provider who now makes their own sauce you can purchase online. Everyone swears that it tastes like the original. Dragon something idk
