Thanks to u/om_nama_shiva_31 I had to make this batch:

75g Thai chilis well washed and sliced thinly
4 heads purple Russian garlic sliced thinly
1 organic lime zested partially then sliced/chopped
400 ml. Red Boat fish sauce (Viet. not Thai) noting any fish sauce is good and Thai is preferred

Mix into a jar. Replenish whatever/whenever low on a given component.

Lasts weeks/months in the fridge and god knows how long on busy Thai street food tables.

Incredible on Thai fried pork belly/chicken wings etc. and coconut rice.
