


Hello! My boyfriend and I made this soup a couple of weeks ago and it was one of the best soups we’ve ever had. I am just curious if anyone knows what is a cream sauce base and what would I buy for chicken stock concentrate? We have chicken bullion cubes but that’s not the same. We are in Pennsylvania USA! 🙂

Instead of using stock concentrate and adding water, just use chicken stock! And cream base I usually sub for some heavy whipping cream or half and half and it works great!

I buy the stock packets on Amazon – Savory Choice!

Better than Bouillon is a very good dupe
There’s a product called Better Than Bouillon that you can use to easily make chicken stock concentrate. Comes in several flavors including chicken, and it’s a great alternative to bouillon. It’s a paste rather than a powder.
You can Google the exact cream base if you want but heavy cream works perfectly.
For soups, I switch to chicken broth instead of concentrate, but it’s Savory Choice brand on Amazon. After cancelling Hello Fresh I always keep some on hand.
As for the Béchamel sauce (cream sauce base) I found 1T butter, 1T flour, melt the better and add flour and cook for a bit – I do a few min to remove the raw flour taste, add 1/2 cup milk and heat until slightly thickened. It can thicken fast so I found as soon as it starts to get thick, remove from heat.

Knorr has bottles of the stock concentrate in both chicken and beef, absolutely love having it on hand!
As others have said, learn how to do a béchamel sauce, once you’ve done it a couple times it is pretty easy. It can be a little daunting the first few times. When you add the milk, it will probably clump up and it’ll look like you’ve messed up. Just keep whisking and slowly adding the milk and it will smooth out! You can also pre-warm the milk some in the microwave to make incorporating it smoother, especially until you get the recipe down. Once you’ve practiced, it comes together really quickly and is (in my opinion) better than just adding heavy cream.
If you are in the area of giant eagle grocery stores, they make bottles of stock concentrate. Walmart also has a “sams choice” brand of their own.
Chicken stock works the same though! Just use that in place of the concentrate and water.
Walmart has both chicken and beef bone broth concentrate in their Sam’s Choice line. Little squeeze bottles.
Instead of stock concentrate you can add tiny bit of miso + soy sauce + sugar
