I love aubergines so much and can’t believe I didn’t know about caponata.
I followed this recipe from my favourite recipe site: [https://www.bitterlemonfood.com/post/roasted-aubergine-green-olive-caponata](https://www.bitterlemonfood.com/post/roasted-aubergine-green-olive-caponata) but I used a brown onion instead of a red one, didn’t use pine nuts (’cause I’m cheap), and I added garlic.
It was so so so good and made a lot, it kept well in the fridge.
Served here with a fried egg and homemade soda bread. Nom nom nom.
