While my rice cakes were soaking, I sauteed up an onion with some ginger garlic, and tomato paste. After it was browned a bit, I added enoki mushrooms and let them cook for 2-3 minutes. I added some gochujang and gochugaru, and added garlic and onion powder. I then added some vegan milk and heavy cream, and touched it up with hot water. Finally, I added the rice cakes and it was super delicious!
