Take your favorite bagel recipe and add 10% (of flour weight) 100% cacao (I used hersheys), .5% instant espresso powder and .5% vanilla extract.
Add an equivalent amount of water as your cacao powder to adjust the hydration “back” to the original recipe’s hydration.
This was my first test run and my dough felt a little over hydrated, so rather than doing 1:1 addition of water/cacao I might do .75:1.
