It allows me to change settings but clicks off immediately after pressing start.

Looks like a low voltage condition, could be a bad power supply, damaged power cord, or a corroded plug/outlet.

Your readout/card is not getting proper power to all parts of the card. Unplug, wait a minute, plug back in and try again. If you get the same results, pitch it. This shows that its power distribution has a problem and this could result in a larger electrical issue and a fire. $100 crockpot vs your home owners insurance deductible/buying new personal belongs/rebuilding part or all of your house/etc. No brainer…. Toss the crock pot.
