Today on ballistic Burgers I’m going to be cooking up for you guys the Char Burger from Portillos out of Chicago Illinois actually they’re all over the nation let’s get going so portello opened their door around 1960 they’re very famous for their Italian beef sandwich as well as

Between the New York dirty water dog and the Chicago style dog and I did it in the stylings of pellos anyway let’s get going with this burger Portillos Cooks up their burgers on an open grill so I’m using my Kettle Grill I have the ballistic Grill in place with just low
Heat little bit of charcoal in here just for toasting the Buns we’re going to kick this off with third pound of 8020 ground chuck little a little bit of kosher salt on board a little bit more salt their buns are toasted I’ll lay them down this is a white bun you know
White bread bun but it’s got like a wheat germ on top this just a little bit of a turn you can see how the top starting to look moist ready to flip nice right nice toast top of this bun the bottom bun here we’re going to place a nice slice of American
Cheese and on top of the crown lay down some mayo that nice hot hot Burger down down some iceberg Lettuce three rings of red onion tomato some dill pickle chips spiral of ketchup then that crown and I present to you Portillos Charburger with cheese this is just a a really beautiful classic American Cheeseburger look at that now I have to explain if you buy this burger at Portillos they they assemble it in two halves so basically in one side of the burger box you know little container they’ll have the bottom bun with the cheese and the Patty then on the other container they’ll have the
Top bun facing up and they’ll lay everything basically in reverse order that I did and then what they’ll do is they’ll take that bottom section and close it really quick then there’s your burger I didn’t have one those little boxes and I didn’t feel that that was
Necessary and I didn’t want to juggle a top bun with all those autant here but look at that all that color I I just love red onion I mean I I think it’s a beautiful beautiful color Accent on a burger and it adds that nice kind of a peppery bite cheers very
Juicy there’s nothing fancy about it there’s nothing pretentious about it um I think it’s a wellth thought out burger I I like a a barrier between the Patty in that bottom bun whether it’s a piece of lettuce or you know Mayo actually because you know there’s a lot
Of fat mayo or the cheese like that I think is pretty cool and it did melt which I’m happy about um but you know it helps that bottom bun maintain its Integrity I think the condiments are good the the Mayo and the ketchup and the onion that that again Red Onion it’s
Got a bite to it definitely cuts any of the sweetness that a lot of people complain about the ketchup I think is countered by that kind of spicy onion um it’s a nice sized Burger it’s not ridiculously thick so it maintains its moisture too you know you don’t have to
Worry about it over cooking and um yeah you get that nice Char flavor I mean it’s a good burger good burger wow anyway I did a Portillos hot dog and now hamburger today all back to back I’m full I’ve literally had like one New York style dirty water dog and the Chicago dog

Portillos sucks now that they were sold a few years back!
You lost me at ketchup. It was hard to hit the like button because it was at 420.

So, did I miss something here? What makes this burger more special than any other burger out there. I've always made these burgers like this at home. Soooo many places make their burgers just like this. LOL. That is actually how a burger is supposed to be made. Lol. Just wondering if there was something I missed. 🤷

Pretty sure these burgers are charbroiled on a conveyor belt fwiw (at least in Chicago) banger of a video though 🙂 — also the spiral of ketchup is applied to the top bun haha

Greg, you may have covered some of the following suggestions: “The Imperial “ burger from Druther’s Burger Queen, or the “Big W” from Weston’s. Or, the “Big Barney” from Red Barn (many think it pre-dated the Big Mac). In my research it seems like if the chains could stay open in competition with Burger King, MacDonalds, etc. it seems like the big boys would just buy them out to get rid of them.

I am from Chicago and Portillo’s was a regular haunt. In addition to the great burgers and dogs, their Italian Beef and Sausage combo with hot peppers is to die for. The double cheese burger is over the top.

Just opened down the street here in Dallas. Always busy, but price is why I have not gone there yet.
burger sticking to grill is why i dont clean the grill well or often. Layer of cooked on crud helps stuff not stick lol.
Looks awesome, except for the ketchup. I'd rather just have the tomato. On the rare occasion I eat a Whopper from BK I allways hold the ketchup. I'm not saying ketchup doesn't belong on a burger, but it doesn't belong on a burger with tomato.
I will say ketchup does not belong on a steak. Don't be that guy.
Pssst … there's no recipe for cheeseburgers, just like there's no recipe for PB&J or scrambled eggs.
