Been practicing this breakfast sandwich and feel like I’ve got it down

extra garlicy aioli, bacon, spinach, omelet with chili oil, on ciabatta. I use a wok to cook the bacon, drain the oil, then make the omelet in the grease. the bowl of the omelet makes it easy to fold over into rectangular shape. best wok ever
