This is one of my favorite recipe that I learned over the years working in a restaurant, Mushroom risotto is one of must recipe you should have around specially in winter season.
1/2 cup cream
1/2 pund parmesan and pecorino cheese
fresh thyme
1 1/2 cup Arborio rice
1 cup white wine
2 cups of warm 2chicken stock
olive oil and butter.
