Welcome back to Mooney makes my name is cie and today we are going to be making brace pudding so if you live in a cold climate like I do and you see snow out your window like I do right now then you may be able to relate to me in that I am
Just in need of kind of cozy comforting desserts to get me through this time of the year and rice pudding to me is just the perfect dessert that checks all of those boxes it’s easy it’s simple and it’s just so comforting it has those kind of cinnamony spices that I enjoy
This time of the year and I know you are going to love it so let’s get right into it but before we begin as always please remember to subscribe like share chat in the comment section and follow me on social media for more recipes and additional content so let’s get right
Into it these are the ingredients that we are going to be using I have some granulated sugar a little bit of brown sugar cinnamon a couple of egg yolks I have some rice right here I have an orange the orange is optional sometimes I’ll go over this later but I do put a
Little bit of orange zest into the rice pudding like I said that’s completely optional you could leave it out sometimes I put it in sometimes I don’t so it’s up to you I have a little bit of vanilla extract and here I have some oat milk which I’m heating up over high heat
And I’m going to bring this up to a boil once it reaches a boil I’m going to turn the heat down to medium and let it simmer and then we’ll continue I’ll show you what it looks like once it’s at a boil okay so this is at a boil as you
Can see here so I’m just going to turn the heat down to medium and I’m going to toss in the rice and I’m going to cook the rice stirring occasionally for 30 minutes and then we’ll continue okay so it has been 30 minutes the rice at this point is cooked through so we’re
Going to toss in the sugar and the cinnamon and I like quite a bit of sugar in um this recipe I like it pretty sweet but you know if you want to add more sugar of course taste it you could add a little bit more whatever you’d like
There’s also a little bit of salt in there I think I forgot to mention that earlier so I’m going to give this a stir until it’s nice and combined okay this looks good so I’m going to toss in the vanilla and I’m using a good amount of vanilla in this
Recipe as well I’m going to give this a quick stir to combine of course and so next we’re going to add in the egg yolks but instead of just adding the egg yolks directly into the rice pudding what we want to do is called tempering the egg
Yolks which means taking about 1/2 cup of the hot liquid putting it into the egg yolks and immediately give it a stir and this way if you once you add the egg yolks into the rice ping they’re not just going to scramble once they make contact with that really hot heat so
Again just give this a stir for a few more seconds okay this is looking good these egg yolks are going to provide just so much richness and it’s going to help thicken it up a little bit more and you just you don’t want to miss it I mean
You could leave them out but I don’t know why you would so here we go and now I’m going to give this a stir again until the egg yolks are nice and combined and you want to stir right away because even though we tempered the eggs to make sure they wouldn’t just scramble
As soon as they hit the pot you know you just want to be sure that everything is just nice and Incorporated cu the last thing you want is scrambled eggs so I’m going to turn my heat down to low and I’m going to cook this for 5 more minutes stirring Consistently as always for the full written recipe and instructions heads to my blog Mooney makes recipes.com I’ll put the link for that in the description box below click on the link the recipe will come right up and make this rice pudding I promise you’re going to love
