S’mores Cookies (Recipe)

    Ingredients

    * 3/4 cup (115g) butter
    * 1 tsp vanilla extract
    * 1/2 cup (150g) brown sugar
    * 3/4 cup (100g) white sugar
    * 2 eggs
    * 2 1/2 (300g) cups baking flour
    * *If using gluten-free flour, add 1 tsp xanthan gum*
    * 1 1/2 (180g) cups almond flour
    * 1 tsp baking soda
    * 1 tsp baking powder
    * 2 milk chocolate bars, cut up
    * 2 cups mini marshmallows
    * *I used Dandies Vegan Marshmallows (vanilla flavoured)*
    * (Optional) Graham cracker crumbs

    Directions

    1. Preheat oven at 350°F (180°C)
    2. In a large bowl, cream together 3/4 cup (115g) butter, 1/2 cups (100g) brown sugar, 3/4 cup (150g) white sugar, and 1 tsp vanilla.
    3. Mix in 2 eggs
    4. Add in 2 1/2 cups (300g) baking flour, 1 1/2 cup (180g) almond flour, 1 tsp baking soda, and 1 tsp baking powder
    5. Break apart and fold in 2 milk chocolate bars
    6. Line a baking tray with parchment paper – OR – cooking spray
    7. Take golf ball sized portions of dough, and evenly space each ball onto baking tray
    8. Make an indent in the balls of dough, and add 1 mini marshmallows inside. Then, close it up, and sprinkle each cookie with extra marshmallows on top
    9. Bake in the oven at 350°F (180°C) for 15-16 minutes
    10. Allow to cool for a minimum of 15 minutes
    11. (Optional) Sprinkle with graham cracker crumbs
    12. Enjoy!
