Do the best tacos ever come from beef tongue? In my humble opinion, YES! Tongue is not the most common cut of beef, and folks are often a little afraid of diving into preparing it, but fear not! This odd cut is delicious and actually fairly simple to prepare. In this video, I am going to show you my favorite way to eat this “odd bit”, by making tongue tacos. I hope you enjoy this nose to tail recipe as much as I do!

Home Made Tortillas are a favorite in my house, we love growing and nixtamalizating our own corn, and I have a tutorial for that here if you are interested in the process. – https://youtu.be/CTzG8hDuGcg?si=gecvmQn3X3BWaw0E

The past 3 years I grew painted mountain corn. This year I will be trialing a Carol Deppe Variety, Cascade Ruby Gold.

Tacos anyone yep terrifying as this looks this beef tongue makes some of the best tacos ever so let me show you how to do That as scary as tongue looks it’s actually one of the easier oals to work with because it doesn’t have a very distinctly organ flavor it tastes a lot like any kind of beef steak has a really strong beef taste but nothing really funky or metallic the key is to process it properly we

Need to peel it first the entire tongue is covered with these kind of finger nail like scratchy bits in order to get this kind of prickly skin off we have to boil it first and then peel it so all we’re going to do is stick this in a pot

Completely covered with water and I like to add a few bay leaves but that’s totally optional couple bay leaves a little bit of salt make sure that the tongue is completely covered in water and that’s it now this is ready to boil away you can do this in the instant

Pot pressure cook it on high for something like an hour or I’m going to set it on the stove top and just let it simmer again probably an hour or two and I’m just going to come back and check on it after about an hour when the skin is

Easily peeling off then you’re ready to go after the tongue simmers for a few hours you should be able to tell that the skin kind of peels away easily once you’re at that point you’re ready to go I let this cool down just a little bit

So I don’t completely sear off all my fingertips and then the skin just really falls off it peels off so easy if you have it cooked enough you feed this to chickens but definitely isn’t for us to Eat once we’re finished peeling we’re left with something like this and at this point you can slice it dice it shred it however you want to get it ready for your Tacos you don’t have to use your fingers like me but I feel like this just gives me a lot more control if ‘s any little lumps or bumps or things that I don’t want in there I can feel them really easily but you could also use

Forks now it’s just time to add taco seasoning and salt to Taste now we’re just going to move this to the stove and reheat it over medium high Heat while the meat is reheating it’s the perfect time to get all of your other favorite toppings prepped my kind of purplish tortillas are made with my own homegrown Painted Mountain corn if you want to see how I turn homegrown corn into nalized masa for tortillas I’ll link that video at the

End treaded tongue looks so good it smells fantastic it’s perfectly reheated and sizzling away let’s add some to our Taco for these tacos I’m using homemade corn tortillas some sour cream cheddar cheese spinach purple garlic sauerkraut and of course our tongue Taco Filling let’s give this a Try the tongue is so moist and tender in this recipe it just falls apart and melts in your mouth one of my very favorite ways to enjoy tongue so I hope you give it a try and I hope you enjoy it as much as I do thank you guys for

Spending your valuable time in the kitchen with me today I hope you enjoyed this video if you did remember to hit that thumbs up button and let me know what you think in the comments I’ll see you all next Week

  1. Wow! You brought back the beautiful memory of my mother preparing beef tongue. My mother would shred it and make a gravy served with mashed potatoes and sauteed onion. The taco recipe sounds delicious! I absolutely love your "Back to Basics" style. Sending many thanks and lots of love.❤️

  2. I simply MUST say…
I am 63 years old and my entire life i have always said the tongue is THE MIST DISGUSTING THING I HAVE EVER SEEN IN MT ENTIRE LIFE!!!
However, i will say, this video is the first time i have ever considered the idea that someday, I might actually try that organ.

    Who knows, mabe.

  3. Absolutely fantastic video… I've been making Tongue … everything for years; I have one in my freezer now and was just thinking, hmmm what should I make with it – Tacos sound delish! I usually make my own lunchmeat or thin[as can be sliced] for sandwiches on some homemade Einkorn sandwich bread… Blessings❤

  4. Thanks for the video Patience! My mom was raised on a farm during the depression so nothing was wasted when they butchered. Growing up we regularly ate beef tongue and heart. I remember the tongue as very tender and tasty.

  5. Thank you for sharing the preparation of beef tongue! I've never made it before and now I understand it better and it's far less intimidating. I can't wait to try it! ❤

  6. Have you ever attempted to brown the meat once the outer layer has been removed, either in the oven or in a hot skillet with some tallow?

  8. When I was a kid my mother would send me and my brothers to school with beef tongue sandwiches. The other kids would always want to trade for my sandwich. The taco wagons in my area offer beef tongue tacos but you have to get there before the tongue is gone for the day. Thanks for the informative video.
