If you’re coming from outside Lebanon and you want to live
a Lebanese experience, you want to live a Lebanese
experience, in sleeping, in food, and in the hospitable
family,
I have an idea for you.
I have the most beautiful garden, I won’t sell it at once.
And if they give me anything, and give me their land,
I will plant it with Ashta and pomegranate, and live a lot,
thank God.
And like this, we will stay in Lebanon, in our Umrani
gardens.
My name is Maria Anjem, I’m 26 years old, I did a
hospitality degree at the NDU, and when I graduated, I
decided to work in yachts in Italy and Cote d’Azur.
I worked for 4 years in the maritime field, I was a yacht
chef. After that, I discovered that I’m not happy.
So I came back to Lebanon, unlike all my friends, and I
decided to start from scratch again.

Hospitality degree at the NDU, and when I graduated, I decided to work in yachts in Italy and Cote d’Azur. I worked for 4 years in the maritime field, I was a yacht chef. After that, I discovered that I’m not happy. So I came back to Lebanon, unlike all my friends, and I
Decided to start from scratch again. I told them that I want to go to my grandfather’s house, where there was nothing at all. Of course, a lot of people asked me what I wanted to do here, and there was nothing to do in Lebanon.
I insisted on doing a nice project, which is a guest house. At the same time, I’m doing hospitality, I’m making food, people are coming from outside Lebanon to live an experience, which I like to serve in my own way, not according to the protocol.
So I started this summer, it was my first summer, it was very nice. I had a garden, which had all kinds of events for children and adults, private dinners, private lunches, breakfasts, and inside there were the rooms where people sleep, a Lebanese experience, a Lebanese family, a mother, a father,
A sister, and a brother. All of us are serving everything. I love this domain a lot, because it’s me, it’s my character. At the same time, here in this house, I help all the ladies in the village sell their Mouneh here. I told my parents that I want to make more flowers, more
Mouneh, so that we can sell them together. So I invited everyone around me to come and work here. At the same time, I’m doing what I love, not what’s easy. Of course it’s hard, but I love this a lot. So this is Maria’s guest house, it’s a Lebanese experience.
In this house, his grandfather Elias lived alone. He was in charge of the neighborhood. All the kids from the neighborhood came to play outside. In this house, there’s always a cup of coffee, a glass of sugar, and a glass of water. I raised all of them at home.
When I go out, I don’t drink coffee. I stopped drinking coffee 4 years ago, and now I’m back. At night, my grandfather used to drink tea, Lipton with lemon. This is my house’s tea. My grandfather’s white coffee cup, sugar, my grandfather’s food. I remember when my grandfather used to make zaatar for us,
Which they used to pick from the garden. It’s the same here. My grandfather Elias used to get up early, and there was always a crowd in the house. So this is still alive, the house. It’s the same. I left all of my grandfather and grandmother’s stuff here, I even put their pictures here.
When I wanted to work on the project, I talked to them, and I said, if this is going to happen, I want it to happen. And it happened. It was easy. Everyone helped me. Everything was done without much effort. Of course, it was tiring, but everything was smooth.
The Amazon is made up of 3 rooms, 2 double rooms, and 1 double bed. It’s a traditional Lebanese breakfast. My mother is the one who makes the saj. So the experience is about breakfast at home, with my sleep, which is not a luxury life, not a luxury room, but a
Lebanese experience, the Lebanese house of Darwish. Of course, there are people who come for breakfast, for brunch, lunch, and dinner. Of course, I make the food, me and the house, my food in the garden, organic food, and everything. We also have mouneh, which is zaatar, which is everything we get from our land.
At the same time, I organize events for children, which is a culinary activity. I give culinary decorations, especially the Lebanese food. When people come from outside Lebanon, they come and have an experience. For example, they make kebab with labneh, I make everything with them, and they eat their food. The concept is…
I started this summer, and in the winter, there will be a coffee shop, and at the same time, a culinary activity, and catering. I do catering for everything outside here. So everything for Christmas, for my birthday, cakes, I do everything. This is the flower table, which is a flower table, and at
The same time, we play cards on it, and at the same time, we play chess on it from here. And also, it’s a small console here. I use it as a table. And here is the garden of the house, which is a garden of
Cream, and now it’s in season, a garden of lemon, and a vine, and everything, but here, the whole story. I also make pesto, I make a lot of products. This is the garden, which speaks for itself, honestly. The avocado tree is 26 years old, it’s not my age.
The seating, the food is always prepared with the house vibes, even the plates and cups, everything is from the house. And this is the garden where we do all the events of the house, in summer, in winter, I don’t know. Here, there are always vegetables, and pomegranate, and
Parsley, which I pick for the people. I am Maria’s mother. I am very happy that I returned to Lebanon because this is the passion of the country. If everyone left, who would stay? That’s why I put my hand in hers, I am working with her,
I am doing as much as I can to make her happy with us until she comes back. We do everything together, we do everything by ourselves, we don’t borrow. We don’t even have a staff to work with us. Me, my daughter, my daughter, my husband, my son, and my
Sister, the whole family, we work together to let this work we started continue, God willing. First of all, I make a very special dough. It is made with green thyme, and whole wheat, of course. I make a lot of things from it, I make cheese, and everything.
I also make something called dakdouk, which people eat with labneh. Labneh is the work of the house, of course. I make shaklish, awarma, I made a very original foul today, and I will make now, I will also make omelette with eggs, with labneh, labneh
Stuffing, and now, you see, we have a lot of cheese mixes, I invent things in them, I don’t like to leave anything on its own, everything is like things, and flavors, and we will taste it now. Charlene Jane, Ibn Elias and Sahaya Jane, you know this village, and you
Love it, and you were raised on loyalty, and on trust between each other, you love this village, and you were here, and you helped each other in everything, thank God, and may God have mercy on them, and what can I tell you about the house, may God have mercy on what happened, thank
God. My father taught me love, and to be loyal to people, and sacrifice, this is the most important thing, this is from the aspect of spirituality. Also, he taught me how to farm, my father was a farmer, he didn’t let anyone else farm, and know about it, and feed
The village here, and all of them love it, and serve them, he took the flowers, we have Karke, we take the flowers, thank God, all the people come to us, from all over the world, they come from Beirut, or from far away, to come and take the good things, thank God.
We used to make Keshek, pomegranate molasses, tomato soup, Hasrom, we used to make everything, we used to make everything, thank God, my mother used to make Rishta, not many people know about it, this was my favorite food. This is Echer Bousfair, we make jam, we make it dry, and we
Make it with sugar syrup, this is dry, we boil it in rose water, with a specific sugar level, brown sugar, healthy brown sugar, you can eat it and rest, we have a spring in the valley, we have a spring in the village, and our
Garden, the spring makes the heart happy, we live in a beautiful cave, with waterfalls, you feel like you are in another place. Once, In the beginning of January, we were doing a help to the village to go and clean the canoes.
They asked me to do it, but we were sitting on top of the spring. I am doing a response to the village and the spring. I told them, in the coast, we have a spring that calms the thirsty hearts. And if we have it, Jesus will come back and he will be
Baptized again. I was traveling for 3 or 4 years and I got tired of it. I came here and I told my father that I don’t want to travel. I want to build my father’s house and make a small hostel with a small restaurant so that she and the family can work.
Thank God, we started in the beginning of summer and we worked together, one hand, all of us, her and her brother, and her mother. We made this hostel here so that my daughter would stay and not travel. Thank God. The dough is made from green thyme, whole wheat flour, and olive oil.
It doesn’t have yeast. Now, we will make cheese with it. We will make pesto with the halloumi. And I will make thyme with wide leaves. This is very new now. I made the wide leaves in the shape of a pie. I will taste it now, little by little.
We will also make, of course, I made the awrama and the village eggs, of course. This is the pesto that we have. Look, God bless you. God blessed us, thank God. Look how it is. I can’t, my eyes are not filling up. Let’s start with the house, how beautiful it was.
How beautiful you saw it. These small rooms. We hear a lot about things that our ancestors used to use. I noticed the old soap, I noticed a lot of things. Not only that, how much Maria lived it. How much she felt it. How much you feel the authenticity. How true you feel it.
I am not making up a story to tell you to come to my house. No, this is the house. Under the tree. Inside the house. I am not making up a story to tell you to come to my house. No, this is the house. Under the tree. Inside the old house. Calm.
In the mountain with a view of the sea. Now it is time to taste the original taste. I will take a fresh bread. With a knife. Follow me. Look what is happening here. We have eggs in the traditional way. Come and feel the shine here. What do we have here?
I will give you something very original. It is this thing. This thing. With pine nuts. Omelette roll. Local eggs. Local Labneh. With Labneh on the inside. A small crunch for the texture which is pine nuts. You know, real food. I will not say more than that. Wow. We are in Al Majounieh square.
In Chay Chamsine. 703. The building number is 71. My number is 70343265. I have on my page on Instagram La Maison de Maria and La Cuisine de Maria. This is for Monada. This is Monada. It is very important that we have Monada here because we
Have a lot of sourness. It has its own way. It is not just Monada. It is very important because it has lemon. Because it is light in sugar. It dries the mouth a bit and you feel the lemon. You know, there are a lot of ingredients. You feel them.
But this is not the main thing. I am enjoying it. Enjoy. This Dakdouk is made from flour, olive oil, and Zoubaa. We grind the Zoubaa with it. We crush it and make it into pieces. We eat the Dakdouk with Labneh. It is the best. Honestly, this Dakdouk is not for everyone.
We will taste it. Lebanese crackers. What did you put here? This is caviar. Do you make them as well? No. You make everything with this. Top. Thank you. Now, we came to the Saj. I am happy for you because my mother is also without garlic and onion. No garlic, no onion. Chai.
Oh my goodness. What is this taste? Unbelievable. There is a taste of something, but there is an extra taste. The extra mile. Love, passion, attention, time, days, years, experience. Madam, thank you for your strength. You are a blessing for the country. Thank you. You are a blessing for the country.
Now, we want to taste the garden thyme as well. The sumac as well. Our sumac. We crush and dry everything. Is the crunch reaching you? Unbelievable. It is close to God. Look at it. Mariana will leave. It is necessary for me to leave because please, we made them. Don’t leave without tasting these.
We made them especially the flower of the pomegranate. Don’t leave. It is delicious. Don’t leave if you didn’t taste these. I will leave. I will finish the video and tell you that I promise to come back because they are worth it.
I promise to come back and spend the day and night and have fun and talk. We will drink Arak and laugh. Whenever someone comes, I tell them to tell me so I can record it. May God strengthen you from my heart. You are a blessing. What can I tell you?
We talked about this a while ago. This is the Moroccan pomegranate. It doesn’t have the crunch that they usually add to it. Have you tried it? Not at all. Very smooth and enjoyable. Lightly sweet. May God protect you. Thank you. I am leaving. Bye, see you soon.
They called me back from the car to show me the Ashta tree. Honestly. Honestly who? I have never tasted anything like this in my life. Wow. Thank you.
