Delamaris Tuna Salad Mexicana with Beans, Corn and Peppers Quesadillas

Honestly i used to love these tins, i’d add them to ramen!

(1) Tin
(2) The meal – Ooey gooey melty yummy
(3) Ingredients – bean salad is a side dish
(4-5) Opened tin, and tin emptied onto a plate. LOTS of vegetables, which taste good by themselves – not mushy or bland 🥰
(6) I added some leftover onion and cilantro from last night’s Tacos de Trompo
(7-12) Make the quesadillas: heat a corn tortilla over medium heat and add some Cheddar cheese. Spoon 1/3 of the tuna mixture over the cheese and top with more cheese – the cheese will seal the tuna into the quesadilla. Top with another corn tortilla. Turn when the cheese on the bottom is melted and continue cooking until all the cheese is melted. Remove to a cutting board and allow the quesadilla to firm up a little (2-3 minutes) before cutting it into quarters.
(13) OHHHH YEAHHHHHH
(14) The bite: tangy vegetables, mild and moist seasoned tuna, cheddar cheesy – DELICIOUS!
I had all my Mexican salsas lined up – and never reached for any of them. This quesadilla was perfect as is, and needed no salsa.

If you like the Freshé Tuna Azteca Ensalata, this Delamaris is BETTER – more veg, better flavor, lower price and more moist.
I was REALLY impressed with the quality of tuna in this tin – nice moist flakes and not dry at all. Generous with the vegetables, that were robust and not mush – a tough ask sometimes in a tin of fish.
The corn and the beans added texture and flavor, while the tuna was savory and delicious in a lightly spiced sauce.
Tuna and cheddar is a classic combo, so I decided to use this tin to make some quesadillas.
This tin would also be great with cheese nachos, in enchiladas, or as chilaquiles – I wish now I had gotten more than one of this tin!!
So far I have been impressed with every Delamaris/Marco Polo brand canned fish I’ve tried – and this one is no exception.
11/10 will buy again, and soon – I have a lot of corn tortillas to get through (since I’m the only one in the fam who prefers them to flour tortillas). Pantry staple!!

Oh dang this looks great. I keep a deeeeep stash of the Freshe Aztec tin which have the same ingredients so I am definitely going to give this a go! Thanks!
