Hey, Chef Kendra Here and today we’re making coconut shrimp and a tasty little dipping sauce to go with it. In our bowl we’re tossing in some orange marmalade. Next up are some red pepper flakes, and the last thing in this sauce is rice vinegar.

We’re going to mix this up well and microwave it for 30 seconds on high. Then we’re going to set it aside. By the way, the link to this recipe is in the about section below. Our shrimp is already been clean, but if it wasn’t we would take a paring knife and remove

The digestive track that runs across the back. Now we’re going to get some oil in our pan and start on coconut, we’re mixing together sweetened coconut and panko bread crumbs with our hands. Now set aside. Now for our batter, flour, baking powder, salt, and water goes into our bowl.

Once everything is in we’re just going to whisk to combine. Now we’re going to dip the shrimp in the batter, then the coconut panko mixture and then we’re going to fry both sides until golden brown.

If you like it light brown take it out early, if you like it crispier leave it in a few seconds longer. It’s your kitchen, do what you want. We’re going to take them out and drain on a cooling rack, and then we’re going to eat it.
