[Homemade] Crispy Fried Chicken

    Looks better than Popeyes. You could probably cook 2 rounds and do dishes before you get 1 order from Popeyes.

    I mainly use a recipe I found a while back, unfortunately, automod is killing the link to the original.

    But I modified it a bit for a lil extra flavor and spice.

    ****Chicken****

    3 lb drumsticks or thighs

    4 cups Buttermilk

    1/2 cup Hot Sauce

    ****Seasoning Mix****

    2 cups Flour

    1 + 1/2 cups Corn Starch

    1 tbsp Kosher Salt

    1 tbsp Truffle Parmesean

    1 tbsp Black Pepper

    1 tbsp Garlic Powder

    1 tbsp Onion Powder

    3 tbsp Cajun Seasoning

    1 tbsp Baking Powder

    ****Wet Batter****

    1 cup seasoning mix

    1/2 cup cold water and and half cup of brine

    You can make cheater buttermilk easily by using whole milk and adding a tbsp of distilled white vinegar per cup. Stir it in and let sit for 15 minutes. Add a half cup of hot sauce of your choice. Then poke holes in the chicken with a knife and brine the chicken for at least 2 hours.

    Whisk together the seasoning mix ingredients, and take out a cup for the wet bath. Combine the cup of seasoning with a cup of water and half cup of leftover brine in a bowl.

    Heat fry oil to 340, (I use electric to regulate the heat)

    Put the seasoning mix on a plate. Drizzle some of the brine in the seasoning mix and mix it in for extra crunchy bits that everyone likes. Dip chicken in the seasoning mix til coated. Then dip the chicken in the wet bath until coated and drip excess batter. Then put it back in the seasoning mix for the last coat. Let sit for a few minutes before frying 8-10 minutes or until 165 degrees internal.
