is it pretty? absolutely not. but it is delicious and only took me 15 minutes to make and every time i eat it i am so full until dinner.

i cooked 60 grams of carbe diem rotini, then tossed in 144 grams of broccoli towards the end of the cook time.

while that was cooking, i blended together 85 g of fat free cottage cheese, 65 g nonfat greek yogurt, 128 g silken tofu, 3 g nutritional yeast, 1/2 tsp of dijon mustard, a small garlic clove, salt, pepper, and a tiny bit of cayenne.

when the pasta was done, i drained it, and added it back to the pan with a reduced fat american cheese single (to give it that gooey plastic cheese texture i love, but you can skip it) and the sauce. i stirred until the cheese melted and that’s it!

tldr; carbe diem pasta is extremely worth it and changed my life. and i love mac and cheese so much.
