This is an easy pasta dish to make. It comes together very quickly. There really isn’t a recipe it’s all about your personal tastes. These amounts are estimated except the pasta. You can always add to this dish, like spinach or other vegetable, and fresh herbs. This would go well with pork or fish as well.

Spaghetti Aglio e Olio
1 lb spaghetti, or other pasta
1/4 c extra virgin olive oil
to taste kosher salt, pepper, red chile flake
to garnish Italian parsley, parmesan cheese

Chicken seasoned with kosher salt, pepper, garlic powder, and dried basil

Welcome to Jason in the kitchen today we’ll be making spaghetti aolo with chicken let’s get started all right we’re making an easy pasta dish tonight called uh spaghetti ugly Olio which is just uh garlic and oil so I’ve got some chicken breast that I’ve cut in half and I’ve seasoned them with salt

Pepper garlic powder and basil and then I’ve sliced up some garlic uh pretty thin here this is what you want you want really thin sliced garlic all right and then I’ve chopped up some Italian Parsley was a little wet so I squeezed it in a paper towel to dry

It off a little bit got some extra virgin olive oil I did my prep work while I’ve got my pasta water already heating to boil and I’m going to boil some spaghetti today and then I’ve got another pan on the heat getting hot so that way we can

Saluté our chicken breast and make our sauce all right so to our heated pan I’m going to add some extra virgin olive oil enough to cover the Bottom okay make sure the oil’s hot Enough we’re almost there just turn the heat a little bit more I cut the chicken breast thin so that way it cooks faster the longer you cook chicken breast on the stove it’s going to dry out so if you have thick chicken breast and you want to cook it

That way you would just sear them in your pan and then bake them in the oven like at 350 until they’re they’re ready but if you cut them down thin or pound them out they they cook really quick and they’ll stay juicy just don’t overcook them because it’s easy to do

With the chicken breast classically the dish doesn’t come with chicken but I’m adding chicken just to make it more substantial all right so I’m going to put it in the Pan right that olive oil really smells good now I’m going to season this side again with the salt this kosher Salt pepper and some more Basil now we’re going to wait till these cook through on halfway through about and get a really good Brown on the on the on this side and then we’re going to flip them over and cook them all the way through on the other side all right let’s check these chicken

Breasts oh look at that nicely Brown all right we’re going to let that finish on that side all right let’s check these chicken breast if you don’t go by feel very well don’t be afraid to use a biotherm thermometer and check your temp in the thickest part so that way you don’t overcook your

Chicken the little one’s done so I want to take that one Out these other one this one’s almost done you want to take it out about 165 or so maybe 160 cuz it’ll carry over cook if you go over a little bit don’t worry but you don’t want to go over too much just want to keep an eye on It so this one’s got a little bit longer This part up front is just a little bit Thick Right there on the Edge all right go ahead and take this one out our water is boiling so I’m going to go ahead and put in our pasta all right water was boiling added some kosher salt make the uh water salty boil the pasta got spaghetti here today so we’re just going

To make sure it’s not sticking Together and this doesn’t take very long to cook maybe about 6 minutes or so so now we’ll start working on our sauce all right so I’ve turned down our heat a little bit and I’m going to need a little bit more olive oil in the Pan it’s really enough to Cover you don’t want the oil or your sauce to really be on the plate you want it really just to coat the pasta it’s not really a a sauce like you would think of in a normal sense you just really want it to coat the pasta so to

This I’m going to add our sliced Garlic I’m going to add a pinch of salt some Pepper and I’m going to add a couple shakes of crust red pepper just depends on how spicy you like it we let that garlic toast for a minute all right the Garlic’s starting to turn light brown so what we want to do now is I’ve taken some of our pasta

Water and I’m going to pour that in the pan this will deglaze the pan too it’ll get all that fond or the where we sauteed the chicken that’ll come up off the bottom and add some flavor as well all right our pasta is drained I’m going to add it right into our

Pan and then we’re just going to toss it Up that’s really all there is to it now you can use your tongs as well to mix it up get it all mixed up get that pasta water and that oil all mixed together and if it’s a little dry you can add a little bit more oil or pasta water but I think

That’s going to do it for us like I said you don’t want a bunch on your plate a bunch of water or oil All right let’s plate this up all right there we are doesn’t that look good quick and easy pasta uh you can all always add you know spinach or some kind of vegetable to it if you’d like it’s not really traditional but you know you’re cooking for your family you

Can do however you like it now to finish this off I went ahead and and diced up the chicken breast you can slice it you can leave it whole whatever you like to do but just want to show you if you can see that let’s see if I get in

Here how juicy that still is well the chicken came out really nice and now to finish this off we’re going to put some you can put a little drizzle of olive oil on the top not too much just a little drizzle Okay we got a little drizzle of extra virgin olive oil put some Parmesan Cheese or Italian snow if you remember our pasta and meat sauce video all right now put some chop to Tian parsley it was a little wet so I uh put it in some paper towels so we can get some of that moisture off of there you don’t want it wet on top of
