This recipe is written for 2 lbs so you could easily double the recipe or slice it in half and do one carnitas recipe and one something else (bbq pulled pork? Although honestly you could even get carnitas into a bbq style once it’s cooked).
I love the schnitzel idea, or if you want to go a little more exotic, basically make schnitzel (katsu) and serve it with a brick of Japanese curry (S&B Golden Curry brand) cooked up and white rice for a delicious asian-inspired dinner.

If you slow cook them in Italian dressing it makes amazing pulled pork!
Slice into chops, freeze what you’re not using right away. Keep hitting good deals whenever you find one. Easiest way to stock up and keep your freezer full.

These are great when you wet brine them overnight then season and roast them to temp if you have a meat thermometer
Cut them into chops, stir fry strips, fajita strips and stew cubes.
Butterfly it and make porchetta.
Slice and pound out seasoned flour egg bread crumbs = schnitzel
