Hi there, I’m looking to make [Kenji’s focaccia](https://www.seriouseats.com/easy-no-knead-olive-rosemary-pistachio-focaccia-kenji-recipe)
but don’t have a cast iron skillet available at the moment. Could I substitute a roasting pan on a baking steel instead? Anyone have experience trying this?

Focaccia is meant to be one of the most forgiving breads. Baking in a sheet pan or roasting pan is fine. Baking steel or not is also fine. Just try to peek under the crust from time to time to make sure the bottom doesn’t get too dark.
