what do you mean from scratch? and what does nationality have to do with it?

    That looks great!

I worry that there is a lot of air in there, Though. I’d squeeze it all down, lay a few cabbage leaves on top, and then weight it with another jar that fits inside the opening or some glass pickle weights. It’s all about the anaerobic environment! Keeping it all under the juice :).

Yeah, why not? The method is finally recorded after years of just being stuck in older Korean ladies’ brains. PS yours looks fire

I’m Korean and this is how I’ve always liked my kimchi. Super RED, lots of gochugaru 😋

YES. Homemade kimchi is pure love. Kimchi don’t care where you came from, kimchi only cares where the two of you are going together ❤️

Yes and there is a lady on YouTube who’s Korean and lives in Mexico. She’s Korean and speaks perfect Spanish and loves doing the fushion

“Great cooking is not for the faint of heart. You must be imaginative, strong hearted. You must try things that may not work. And you must not let anyone define ur limits because of where you come from. Ur only limit is ur soul. What I say is true. Anyone can cook. But only the fearless can be great.” – Chef Gusteau

  8. Looks good! Now for some Kimchi / Kalbi tacos!
