    I just can’t ever get that much oven spring – I wish I had air bubbles like that.

    What’s the trick there? Is your dough formed and then rested for long before topping?

    Is it Vito Iacopelli 100% polish recipe on YT? I tried that last night and it worked really well- exactly as he said it would be and just like yours. Crust was super springy and crunchy.
