Today I’m restocking my fridge with all healthy veggies for 2024! I make some easy meal prep recipes for this week. I eat a mostly whole food plant based dairy free vegetarian diet.

pesto pasta primavera
olive oil or veggie broth for sauteeing
1 onion diced
1/2 8oz package crimini mushrooms sliced thin
4 small tomatoes sliced
1 tbsp italian seasoning
red pepper flakes to your taste
1 zucchini sliced
3 cups broccoli chopped
1/2 package trader joes kale pesto
1 package red lentil pasta
1/2 cup shredded cheese- optional
tofu lettuce wraps (double recipe)
2 red bell peppers diced
~ 6 shiitake mushrooms diced
1 large carrot julienned
2 packages extra super firm tofu
1/4 cup coconut aminos, or more to taste
1 to 2 tbsp dark soy sauce
1 tbsp sesame oil
1 tsp mushroom umami seasoning
1 tsp garlic powder
red pepper flakes or sriracha to your taste
2 packages coleslaw mix
saute all ingredients together til veggies are soft, serve in a lettuce wrap with spicy cashew mayo on top and green onions.

Show you how I like to load up my fridge with all my produce and how I like to prep it so I can make tons of Veggie filled healthy recipes during the week I’ve been eating mostly all Whole Food plant-based vegetarian diet for the past
10 years so I feel like I have a pretty good routine of what to buy and prep for making balanced nourishing meals so here we go this is where we’re starting with I have some miscellaneous veggies and fruits in here I’m going to clean it all
Out get it nice and fresh wipe down all these crumbs and I’ll show you what I bought for this week we’ll make it a nice inspiring place to cook out of by the way I am so close to hitting 100K followers if you’re new here make sure

About just so much plastic like usually I get this stuff at the farmers market and it saves so much plastic but yeah I just want to apologize and Advance first thing I’m going to do is wash my produce so it’s really easy to use I’m obsessed
With this baby gem lettuce at the moment this is my favorite lettuce these work great as like little wraps like little lettuce taco shells they just taste so good in a salad like it’s the perfect crispy like little baby pieces I’m also obsessed with these mini peppers so I
Got two of these bell peppers have a lot of vitamin C in them and um I like to snack on these I got some berries um I already tasted one of these and I’m kind of disappointed they’re not in season right now I mostly just wanted to load
Up on produce this shopping trip I have so much pantry and like staple Goods I mostly just wanted to restock my fridge so other things I got some chiaki mushrooms this is one of my favorite Trader Joe’s finds ready veggies these cook so fast and they’re just such a
Good thing to have on hand for like an easy dinner if you’re trying to eat more veggies definitely pick up these organic Cosmic crisp these apples are so good I love this apple specifically right first thing I’m going to do is wash all my produce off so it’s
All ready to use during the week there’ll be no excuses you’ll have some nice fresh veggies I’m definitely way less excited to cook if I have to like wash the produce first like it’s just an extra chore this is my favorite vegetable next I’m washing off these baby and
Lettuce I’m just going to give these a little rinse I’m going to wash off all this bok choy that I bought put it in smoothies or stir fries bok choy is my favorite thing to add to smoothies because you can barely taste it and compared to spinach Bak Choy doesn’t
Have as much oxalic acid in it oxalic acid I don’t know how to say it oxic acid it binds to calcium o Choy is also higher in calcium and um it has a really mild flavor in a smoothie like as opposed to kale kale has more of a pungent
Flavor next I’m going to wash off my app next I took everything out of the fridge so I could get it nice and clean and wipe away all these so I’m just using a sponge with some dish soap in it to scrub this down and get it all nice
And clean in here I’m going to put these in the salad spinner to get any excess water off and that’s going to make it stay fresh longer see extra water I’ll link all these containers in the description box I got these all from Amazon I love these clear containers
Because you can look in your fridge and just see everything you have really easily and also these ones keep my produce really Fresh So I eat a mostly Whole Food plant-based diet but I will have some pasteurise eggs occasionally as a convenient way to get in some extra
Protein in my diet especially I’ve been doing a lot of strenuous workouts I like having the extra protein actually lately I don’t really eat them as much cuz they’re kind of giving me the ick but my boyfriend eats these every day you know what I think it’s been good that I
Didn’t go to the farmers market because when I go there I just want to buy every veggie I see but this way I kind of kept it simple this week and only got like a few things I know I’m going to use actually you can splash some water in
The carrots and that will help keep them crisp I love having my produce out at eye level like this so that you can actually see what’s in there and you’ll be more likely to use it rather than it just like rotting in the back of the fridge last thing I’m putting away is
These Strawberries So next I’m going to start prepping some simple recipes that we can eat over the next couple days this first one is so easy it’s actually really easy to make as like a weekday meal it comes together like really fast it’s also great for meal prep if you don’t feel like
Spending a ton of time prepping this recipe is super simple I’m going to make a Pasta Prima Vera with a bunch of veggies in it I love to use lentil pasta in my recipes instead of regular pasta because it adds an additional protein source so here some of the veggies I’m
Going to be using I just pulled out whatever I bought so for veggies I’m using some red onion sliced crini mushrooms a few tomatoes and some zucchini this recipe is extremely versatile you can use whatever veggies you have on hand I like to always make
Sure I eat some mushrooms every day so I try to put mushrooms in like every recipe I make I’m boiling some water in a second pot so I can cook the pasta and for the veggies I just sauteed them all down together really simple also feel
Free to add in any protein option that you like oh my God my pepper exploded all over my no veggies so I one by one picked out all the peppercorns yes it took me like 20 minutes and then I recruited Colin to help me okay well I picked out all of the
Black pepper corns now I’m going to add a little bit more seasonings Italian seasonings then I added the zucchini last because it doesn’t take that long to cook and I also added in a bunch of broccoli by the way did you guys know green vegetables are surprisingly higher
In protein than you would think most of them are around like 20% protein which I feel like is surprising they can help you like add to your protein intake okay I’m just going to scoop it into Here I’m going to use this Trader Joe’s vegan kale cashew and basil pesto I love this stuff it tastes really good and we don’t have a ton left so I’m just going to scoop out whatever I can and there we go that’s it so easy okay this actually looks
Delicious so you want to leave these uncovered to cool down before you put them in the fridge we go through a lot of milk in our coffee every day so I’m going to pour it in this container so it looks nicer and um yeah that’s the only reason I’m
Really into this cashew almond Macadamia nutmilk from Trader Joe’s at the moment I’ve been using this in my coffee tastes pretty good there we go Perfect so I’m going to make one more meal prep recipe that we can eat over the next couple days I’m going to make tofu lettuce wrap filling this is really similar to The Egg Roll in a bowl recipe I’ve made before on this channel I’ve been making this recipe so much actually
I made it like three times last week it’s one of my current favorite meals so I’m just dicing up these chiaki mushrooms I got this little Julian peeler and it is so useful for making quick carrot strips all you do is shred it like this
I’m just going to cut these up a little bit so first I’m going to just sauté down the veggies to get them nice and soft honestly I just like to throw everything together and let it [Applause] simmer add in oh my cubed Tofu for seasonings I’m using this
Coconut aminos it has to be coconut aminos because this is a lot sweeter than regular like soy sauce or brags aminos and you want it to be a little bit sweeter for the lettuce wraps also like to use a little bit of sesame oil add a nice flavor a little bit of Darker
Colored soy sauce for the color mushroom Umami seasoning this is my secret ingredient you don’t need to add this but I love this flavor it adds Chinese five spice seasoning um you only need like a tiny bit cuz it’s really strong that is pretty much it you can
Like adjust these seasonings and I just let everything cooked down together super simple recipe add in your Kela mix and just let all the veggies steamed together you could add like ginger and garlic but I’m just keeping this really simple today I’ve been eating this as lettuce wraps but you could also prep
Some quinoa or brown rice to eat this with and yeah just wait for the Cabbage to cook down this seriously is like a 15-minute meal while my kofu mixture is cooking I’m going to make a spicy Sriracha mayo that I like to use on top of the these I’m going to use a
Combination of hemp seeds and cashews honestly I don’t really measure [Applause] this to blend this up and make it really creamy I like to use soy milk Um makes it really smooth unfortunately this is supposed to be spicy Sriracha mayo but I don’t have any Sriracha so I’m going to use a combination of whatever hot sauces I have and I just eyeball it just measure with your heart Trader Joe’s chunky garlic and jalapeno
Hot sauce I think this will give it more of a Sriracha flavor cuz it has the garlic in there it’s looking pretty good let’s taste test this combination of hot sauces oh my God it is like Perfection tastes amazing oh my God I wish you guys could taste
This tastes so good I’m going to transfer it into this bottle Okay let’s put my lettuce wraps away so this is how our tofu is looking so I don’t know if other people like soft tofu like this like you could bake it or like pan fry it to get it more crispy but this is how me and CT like to eat it
I’m going to let it cool down a little bit before I put it Away I got these little mini guacamole going to be perfect for my avocado toast in the morning or just as like a little snack and I have these mini hummus cups I love these whole wheat wraps to make little pizzas and I got regular Ezekiel Bread wraps some vegan cheese some cream
Cheese and lastly some olives from the farmers market that have been in here for seriously like 6 months I really need to eat these let’s just tuck them back in the corner in the way back I’m going to tuck my ground flax seeds so it
Stays fresh I like to put it in the fridge and that’s It and finally our fridge transformation is complete compl I think this is seriously one of my best ones yet I love how every every produce has its own container it makes it look super pretty and I’m so excited to cook out of my fridge this week next up I’m going to
Show you just a few things I made this week um with this week’s fridge restock people always ask me like what I make with this food so I figured it would be good to share that so first up this is how the tofu lettuce wraps turned out
Such an easy dinner to throw together all we did is reheat the filling and then also you can turn the filling into these rice paper dumpling things these were so so good here is a post-workout snack smoothie thing I made protein smoothie with greens and a veggie
Platter with a hummus toast I also made this veggie mushroom lentil soup this was really good I probably make a big instant pot soup like this like once a week and to make it creamy instead of cashews I used Blended soft tofu and it makes a creamy broth with some extra
Protein in there um this is what I’ve been having for breakfast pretty boring but just like a berry smoothie and some avocado toast here’s one baby gem salad I made white beans avocado Trader Joe’s creamy Dill dressing for lunch one day I made this veggie Tempe stir fry on the
Weekend we made this lavash Pizza this came out so good and here’s an example of just like what I make everyday salad I just throw a bunch of random stuff in a bowl and it’s not very pretty but it’s easy and it’s very nutritious that is it

Honestly Chanty, we don’t need giveaways – we just love your inspiring videos. They’re so natural and slightly funny. I always smile when you leave in a ‘mistake’ like getting peppercorns in the bowl and having to pick them out by hand! We all do it and it just feels so natural to watch other people’s normal lives.
But your videos always cheer me up when I’m having health problems. I can only eat whole natural veggie foods (nothing packaged) because of previous treatments over the years. Not many food vloggers cook the sort of food I can eat, so I really look forward to yours.

No need to wash your fruits & vegetables prior to storing them in the fridge unless you have to cook or eat it right away because washing immediately leads to creating an environment where bacteria can thrive & shorten the shelf-life of your produce.
