Spanish Seafood Paella recipe
This is my own version of the popular Spanish paella. I realised Spanish paella can be a success with just a few key ingredients like Spanish Chorizo, king prawns, and good round rice.
📌 Ingredients for 3/4 servings
1. 3 cups of rice
2. ⁠One big onion
3. ⁠4 cloves of garlic
4. ⁠One big red bell pepper
5. ⁠One beef tomato
6. ⁠125g of Spanish chorizo
7. ⁠50ml of white wine
8. ⁠2 tsp of paprika powder
9. ⁠12 jumbo tiger prawns
10. ⁠500g of mussels
11. ⁠150g of squid (optional)
12. ⁠2 tablespoons of olive oil
13. ⁠1 tsp of salt
14. ⁠200ml of chicken stock or water

📌Cooking steps:
1. Rinse the rice with cold water and soak in cold water for 20 minutes before cooking
2. Dice the onion, bell pepper, chorizo, and tomato in small cubes.
3. ⁠Heat up a big frying pan, add in the oil, and fry the onion until a bit soft
4. ⁠Push the onion around, add the chorizo, and fry until it releases the red oil
5. ⁠Add in the garlic and fry for 20 seconds
6. ⁠Add in the bell pepper and fry for 30 seconds
7. ⁠Push all the above on the side, add the prawns, fry until the color turns red, and take the prawns out and put aside
8. ⁠Add the tomato and cook for a minute
8. ⁠Add the paprika and white wine, cook for one minute
9. ⁠Add in rice and spread evenly
10. ⁠Add the cooked prawns, cooked mussels, and squid if you have
11. Add in the salt and the stock or water, just enough to cover the rice
12. ⁠Cover the lid and cook at medium-high heat for 5 minutes. Then, turn the heat to a very low level, cook for another 20 minutes, and turn off the fire.
