Pineapple Chicken Kabobs with Hawaiian Rice

Chicken Kabobs:
4 boneless skinless chicken breast
1 pineapple, cut into bite size pieces (save about ½ cup for rice)
Marinade for chicken:
¼ cup pineapple juice
¼ cup soy sauce (If you are making this GF, be sure to use GF soy sauce)
2 Tablespoons olive oil
2 Tablespoons brown sugar
1/2 -1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
Salt and pepper

Mix all marinade ingredients. Pour over chicken. Marinate for at least 6 hours. Add chicken and pineapple to skewers. Grill until chicken is cooked through.

Hawaiian Rice:
1 ½ cups uncooked rice
¼ coconut oil
½ cup red pepper, diced
½ cup onion, diced
¼ cup pineapple, diced
3 cloves garlic, minced
¼ cup soy sauce
¼-1/2 cup pineapple juice, I start with a ¼ cup and then add more as it cooks down.
¼ shredded sweetened coconut (optional)

Cook rice. Meanwhile, heat coconut oil and saute red peppers and onions until tender. Add garlic and pineapple and saute for another minute. Add soy sauce and pineapple juice. Add rice and mix well. Add coconut, if desired.

Hi guys I am going to share two delicious recipes with you I created both of these recipes when I wanted something a little bit different so I have some marinated grilled chicken kebabs with pineapple and some Hawaiian rice these complement each other wonderfully and there are so much flavor

And this is a rather healthy recipe I think you guys will really like this one especially if you want to try something just a little bit different so let’s get started to make your pineapple chicken kebabs you’re going to start by marinating the chicken I have four boneless skinless chicken breasts and I

Cut them into bite-size pieces you don’t want the pieces too large because they can get kind of dried out while they’re cooking but you want them large enough so that they’re not going to fall off the kebabs I have a quarter of a cup of pineapple juice I’m going to

Use a quarter of a cup of soy sauce two tablespoons of olive oil two tablespoons of brown sugar one teaspoon of garlic powder this is optional but I like to add about a half a teaspoon to a teaspoon of crushed red pepper flakes it won’t change the flavor too much if you

Want to leave that out and then I’m going to add some salt and pepper I usually add about a quarter to a half teaspoon of pepper and about a half to a teaspoon of salt you’ll just want to lift all of your marinade ingredients together pour it over your chicken and

Then you’ll just marinate it for about six hours or so the longer you marinate it the more flavorful it will be I also have a pineapple that I cut into large chunks and I am going to add some of the pineapple to the Hawaiian rice so I set

About a half a cup a side you can add about a quarter to a half a cup of chopped pineapple to the Hawaiian rice and then I took out my chicken so I have everything set to assemble my kabob I have six viewers that mine are pretty

Long if you have some shorter wooden ones and you’ll probably make a little more and I just go ahead and put a piece of pineapple and then a piece of chicken and continue until the skewer is full they’re very simple to us so all of my kabobs are all set I like

To let my chicken set up for about a half an hour until it’s room temperature before i grill it so once you have let your chicken set out for about a half an hour you can go ahead and put them on the grill and you’re just going to

Continuously turn these and let them cook the cook time is going to depend on how thick you cut your chicken to make your Hawaiian rice you’re going to need one and a half cups of rice I have brown rice if you prefer white rice you can definitely use that you’re going

To need a quarter of a cup of coconut oil if you don’t cook with coconut oil and you have olive oil or another oil that you like to cook with you can definitely use that I have a 1/2 cup of pineapple juice 1/4 of a cup of soy

Sauce I have a quarter of a cup of shredded coconut about a quarter to a half cup of chopped pineapple I have half of a red bell pepper chopped three cloves of garlic minced and half of a small onion chopped now if you don’t like coconut you can leave that

Out I ended up adding that at the end when I made it last time and I thought it was a great addition you can either use sweetened coconut or unsweetened it doesn’t really matter so you’re going to start by cooking your rice so you can follow the directions on the package or

However you like to cook rice I am going to boil 3 cups of water I like to use the two-to-one ratio when cooking rice once your water comes to a boil you can add your rice once the rice comes to a second boil I turn the heat to medium

Add my lid and then set my timer for 20 minutes and this seems to be the perfect amount of time to cook brown rice when your rice has about 8 or 9 minutes you’re going to heat a large skillet over medium-high heat and once it’s nice

And hot you’re going to add your coconut oil once your coconut oil is nice and hot you’re going to add your peppers and onion and then you’re just going to saute these for about 3 to 4 minutes until they’re nice and tender once your peppers and onions are nice

And tender you’re going to add your garlic and the chopped pineapple and you’re just going to saute that just be careful not to let your garlic burn so go to that for about another minute then you’re going to add your quarter of a cup of soy sauce in about a quarter of a

Cup of the pineapple juice the last time I made this it cooked down and then I added another quarter of a cup after it cooked for a little while then you’re going to add your cooked rice to your sauteed vegetables you’re just going to cook and stir that and then you can add

So it should be all set as you can see there isn’t much liquid I did end up adding the other quarter of a cup of pineapple juice just go ahead and remove it from the heat and let it cool a little bit and give it a taste

You can only add a little more soy sauce or pineapple juice coconut whatever you whatever you prefer so I have my grilled chicken and pineapple kabob and my Hawaiian rice and we are looking forward to this very flavorful delicious dinner I hope you enjoyed this recipe and I
