I used a chuck roast cut into 1/4ths, olive oiled, seasoned with s&p and browned all sides in my lodge. After I was done browning, I added 12 pealed whole garlic cloves, onions, shallots and allowed that to cook for a few minutes. Then deglazed with red wine, Worcestershire and a few kicks of Tabasco. I cooked the booze out, added beef stock, bay leaves, thyme, french onion soup mix and various seasonings. The beef went into the crock pot on a bed of onions cut into rings. I added yellow potatoes, carrots and then poured that magnificent broth over all of it and cooked it on low for 10 hours. I’m a humble man, but holy fucking shit. This might be the best thing I’ve ever created.

    Seems like a few extra steps for the broth only to cook it even longer but if it was good then, great!
