Preparation

  1. Preheat oven to 400 degrees. Line a muffin pan with paper baking cups, or use a nonstick pan.
  2. Melt the butter in a small pan. Then put it into a large bowl. Add egg and sugar, and whisk. Add all the remaining ingredients, and fold gently until they are mixed. Spoon the batter into the baking cups — 6 for big muffins, 12 for little ones.
  3. Bake in the middle of the oven until the muffins are slightly brown around the edges, about 30 minutes.
  4. Let the muffins cool in the pan for 5 minutes before eating.
