How to make the easiest and creamy Lemon and Herb Risotto. This simple recipe is easy enough for the novice of home cooks. Wow your friends and family with this easy recipe!

Lemon and Herb Risotto
3 tbs Olive Oil
1 Shallot, minced
2 cloves garlic, minced
1 cup Arborio Rice
1⁄2 cup White Wine (Chardonnay works well) or substitute with stock 5 cups Vegetable Stock
1⁄2 cup, Frozen Peas
1 tsp Fresh Thyme, Chopped
1 tsp Fresh Rosemary, Chopped
1 tbs Fresh Parsley, Chopped
1⁄2 cup Grated Parmesan Cheese
1 Lemon, zested and juiced
1 tbs Fresh Parsley, Chopped
Salt TT
Pepper TT

1. Heat your skillet on medium high heat, add in your olive oil and let it get hot. Once your oil is hot sauté the shallots until they are translucent and soft.

2. Add in your garlic and cook it until it fragrant, then stir in your rice and coat the rice in the oil. Cook for the rice for 1-2 minutes. Add in your wine or stock substitution and deglaze your pan (scrape the bottom of the pan with a wooden spoon to release the brown bits from the bottom of the pan). Let the wine reduce to almost nothing.

3. Reduce your heat to medium and add in your stock 1 cup at a time. Stir your risotto with a wooden and let the rice absorb the stock. Once the stock is almost all absorbed then add in an additional cup of stock. We will continue to repeat these steps until the rice is nice and al dente (soft to the bite and your rice grains will be nice and plump).

4. When your rice is just about done add in your peas and fresh herbs. Once your peas are cooked through add in your grated cheese and season with salt and pepper to taste. The final consistency that you are looking for is a nice and creamy risotto. If you feel like you need to thin your risotto out after adding your cheese, then add about 1⁄4 cup of stock.

5. Add in your lemon juice and zest and stir to combine. Serve risotto in shallow bowls and garnish with chopped parsley.
